      Indeed. Ben and Kush are what i like to call, instructor chefs. They know what they are doing, and can explain it to you so that you can see what they are doing and why. The both of them remind me a lot of Alton Brown. I don't want to just see great chefs making great food. I want to see how i can do it too, and understanding the science behind the cooking makes it easier for me to understand.
      Don't tell me to do X, explain why X is the right choice for this situation. That way i can understand why the rules exist, and when breaking the rule is a good idea.

The chefs come into the kitchen, take a quick look at what´s going on and then think about what to do next while doing some other stuff (chopping etc.). Normals usually flap around for a bit before springing into action. Which is totally understandable - but could be improved.

    I've been reading the incredible Salt Fat Acid Heat by Samin Nosrat, and Kush put on a masterclass in how a professional chef intuitively reaches for each of those elements! Realizing that literally everything needed salt and using vinegar in almost every dish to add freshness and balance out the heavy flavors of all the fats being used to salvage a mess of a kitchen into a well-balanced and enjoyable meal (even though it sounds like from his ending comments that he would have preferred to have a little more time to perfect the seasoning balance) is an actual superpower, and one that I'm hoping I can come even close to imitating someday.

    • @Aliennumberb
      @Aliennumberb 5 месяцев назад +19

      @@indigova I disagree, I feel all of the chefs worked as if they were working with chefs and Barry got a bit overwhelmed. It feels like we saw a glimpse of Ben cooking without the hand holding he normally gives the normals and it was eye opening. For instance Barry re-hydrated the potatoes instead of putting them in the oven (Ben did say they were just to parboil in the water not cook), he tried cooking pig's cheek which he didn't have time for (he thought they were something else), he almost burnt the apples that he started and didn't add any of the apple related items in his time (the juice, caramel, sugar), he missed the clams and the grapes, I also think he almost burnt the garlic he spent too much time mincing. In all fairness to Baz I think this was just first time jitters and I do feel that he was dropped in the deep end with just a sous chef apron and a dream, but I think he should give himself more credit than a 1. He realized at the end how things were coming together, but was out of time. He's also the only one without any experience in a professional kitchen. I would like if they did this again, but gave Barry 20 minutes to come up to speed.
