Ecuadorian potato Locro with pork rinds (Locro de papa)

    My delicious homemade Ají: • Delicioso Ají de tomat...
    INGREDIENTS:
    2lb potatoes
    ½lb pork rind
    1 red onion
    1 tomato
    ¼ green bell pepper
    4 garlic cloves
    1 stalk of green onion
    1 handful of cilantro
    ½ of cheese
    1 cup of milk
    ½ teaspoon of annatto
    1 dash of oil
    ½ teaspoon of cumin
    1 pinch of pepper
    Salt to taste
    Water
    Sides:
    Cheese
    Avocado
    Homemade Ají
    RECIPE:
    Cut the pork rind into medium cubes and boil them on high heat for 20 minutes or until they’re tender.
    In a pot add a dash of oil with the annatto paste, add the chopped red onion, tomato, green bell pepper, green onion, garlic, and cilantro, for a refrito.
    Cook until the onion is almost transparent.
    Add the peeled and medium diced potatoes. Mix well with the refrito, and cover with water.
    Cook the potatoes until they’re soft then mash them so it has that creamy texture.
    Add milk, the pork rinds and some more cubed potatoes.
    Boil until the potato cubes cook, around 15 minutes.
    Taste the salt, add cheese and some cilantro finely chopped.
    To plate add some cubed cheese, chopped cilantro, serve with avocado or homemade ají.
