    I've always been afraid to use my canned foods straight out of the jar. I thought it had to be cooked again for 15 minutes before using. Obviously I'm a wrong...which opens up a whole new world for me. Thank you!

      I was taught to boil home canned food for 10 minutes before eating to guard against botulism. Are there new rules on this, Pam? Your Mother’s bowl is lovely. Thanks for all you do, Pam and Jim! God bless! ❤️

      If processed properly and stored without ring and one tier of jars. You will be able to spot a jar gone off. If you need almost a crowbar to remove the sealed lid, I would definitely call it safe to eat as is. Look and smell test will also help before a taste test.
      I opened a green bean jar from 2019 a few days ago (seal was so tight I had to use a bottle opener to bend the lid to unseal.). The beans were a soft crisp, green as the day they were canned and flavor fresh as boiled beans. Had I re-cooked them, they would lose their quality. I tossed out a buddy jar that had a great seal but had an army green color to them ( probably nothing dangerous, but I have so many from 2019 garden harvest season. Why bother ? ).
      I am cursed with wife who refuses to cook with my canned foods and she is the main cook. I canned for 2-4 person volumes and now overstocked with proportions too big for me alone. I am now doing mostly dehydrated foods now.
      Red Rose's bean salad will help me make a week's worth of side dish for lunches.

    1 pint chickpeas
    1 pint kidney beans
    1 pint green beans
    1 can wax beans
    Rinse, drain.
    Dressing:
    1/2 cup ac vinegar
    1/2 cup oil
    1/2 c sugar, or more to taste
    1 tsp salt, or more to taste
    1/4 tsp pepper
    3/4 c celery
    3/4 c bell pepper
    1 chopped red onion
    Stir in beans. Chill 24 hours, covered. Stir a few times to marinate evenly.

    I love 3 bean salad with Zesty Italian dressing, no sugar. Sometimes I add 2 cups of cooked pasta and some grated Romano cheese. The foundation veggies are so flexible!

    I believe there is a Ball recipe for canning the salad - using previously canned chick peas and Kidney beans with fresh green and wax beans. These include the onion, green pepper, vinegar, sugar, and salt. Leaving out the oil permits can cold water bath processing. I live along, and 3 quarts of finished product is a bit much.

      Divide it into 1/2 pint (250 ml) or pint (500ml) size jars. I hate the cost of new jars today, but it is a long-term investment. This way you can make meals for one.

    I've always heard about bean salad but have always been too "picky" to try it. This recipe looks yummy enough for me to want to try it. I bet all of those beans would be spectaular if grown in a home garden! Your mom's bowl is lovely, Pam! Thanks for sharing this recipe with us!

      @@piggyacres I use Pam’s recipe and add 1 pint rinsed, black-eyed peas. The waxed beans were a MUST for my mother as well.

    I see you went to a beautiful copper single bowled sink! Just gorgeous! Single bowls so much easier to wash big trays and pots. What a wonderful recipe. I don’t like most cold bean recipes but this looks very nice! Thank you and continue enjoying the new kitchen design

    I can wax beans for the first time last garden seasoning I live in Wyoming and the wax beans did much better than the green beans I'm in extremely pleased how they turned out

      I for 10 years had little success growing celery. Then one year i had 1/2 ton yield because the season was perfect for them. Dehydrators and canners worked overtime that year. Beans are less finicky, but always one or so bean types just boom yield. That is why preserving skills are important skills to have.

    My mother made this. We add a tablespoon of soy sauce and mix equal parts sugar and vinegar. I love it! Beautiful bowl.

    I make this salad all the time but I use three fourths cup of sugar minimum and salt to taste. I also bring the dressing to a boil and pour it over the salad before refrigerating it for at least 8 hours. I'll have to try celery in it next time.

    Your Mom gave you a beautiful bowl! Folks don't use these much, but I personally love them. We also own the same fridge! I'm running out of storage space for my jars, and living in Florida, my very roomy 3 car garage is out of the question... I've now got the newest ones in bins under my bed. Ugh! 🥴

    Love three-bean salad (no garbanzo) but it would be delicious with that addition. Adding corn gives it an even wider taste. Serves fantastic with grilled chicken! Now I’ll have to add it into my menu soon. Thank you!

      Wow, you just triggered a thought. Mix beans with a quart of Corn & Zucchini Salsa for salad dressing and vegetables. Volla ! Mexican 4 Bean Salad. Black beans and/ or pinto beans instead of chickpeas and kidney beans would work.
      Served with a cup of Cilantro-Lime Rice would make a delicious balanced meal.

    4-bean salad is one of my husband's favorites. Each year, we plant green beans as well as wax beans, so I always have them on hand. My recipe for the salad is similar to mine except that I add 1 tsp. of dried basil in my salad. This gives it a unique taste. I really enjoy watching your videos.

    I would love to see you make this again using all items that you preserved. It would be great to know if freeze dried onions and celery would have worked so you would know if this is a good option in a grid down situation.

    Oh my goodness, everything about this video reminds me of my mother. I don’t think I’ve had a bean salad since my mother passed away over 20 years ago. It’s so sweet that you’re using your mother’s bowl. Can’t thank you enough for sharing. I’m glad you mentioned your community page, I always miss it since it’s not available on iPads.       @@kaybishop7861 You can access it on your iPhone but not iPad (I can’t imagine why Apple doesn’t make it available on iPad). Once you click on RoseRed channel, you’ll see options - Home, Videos, Playlists and then the Community Tab. You can always use your laptop to access it the same way. Best of luck.

      I am going to do the same for myself. Also will be making this without oil and hot water bathed pickled 4 bean salad. Add oil later.

    It looks tasty, I use yellow, orange & red bells instead of green,. I haven't added celery, I just used celery seed, I am looking forward to trying it with celery. I think I would clean the used jars and put all the solids in them and then pour on the dressing to meld the flavors.

    This is one of my favorite dishes to take to a pot luck or serve at Easter with ham and othercsalads. My cousin got me hooked on it. Now that I'm canning, I buy green and wax beans from a Hutterite stand at a farmers market and add the kidney beans and chickpeas and can it to eat during the winter. I canned kidney beans last fall but I need to do a batch of chickpeas so I can make more 4 bean salad this year. Thanks for your video.
