Thank you for this recipe! By far the best no-bake cheesecake recipe Ive ever tried. No need for gelatine yet so creamy and sets overnight. Next time I will add a blueberry or strawberry topping on top, since the batter isnt cloyingly sweet like most recipes.

Made this recipe yesterday, i am very glad i found it , it was absolutely delicious, i added some sliced strawberries on the top and some strawberry candy sprinkles, the sugar added to this recipe was pretty much perfect.

@@tills7056 honestly I followed her recipe exactly ( added more heavy cream by an oz or two. But you don't have to do that) and this is what I did and mine set nicely. I did leave it overnight from at least 2am to 2 pm next day!
Make sure to follow temperatures correctly. The cream cheese has to be soft and room temp. Either leave it out on the counter for an hour OR take your 16 oz cream cheese (no wrapping on or out of the tub and put in a microwave safe bowl) and microwave in 10 seconds bursts , flipping the cream cheese after each burst, for no more than 30-40 seconds. If your cream cheese has been out for a small amount of time but still doesn't seem room temp, only needs max 20-30 seconds.
Move to mixing bowl
Whip it till its fully whipped
Take the 2 tsp vanilla extract and rounded 1/2 cup sifted powdered sugar (I didn't sift mine for some reason it still seemed to set fine)
And blend that in on low speed on your hand mixer (I used the lowest speed the entire recipe)
Once it's all well incorporated set aside
Grab another mixing bowl
Take 4oz heavy cream straight from the fridge and mix in the bowl on lowest speed or 1 speed above that until it starts to get thickened. Stop mixer as soon as the stiff peaks form.
Take the heavy whipped cream and fold gently into the cream cheese mixture. Very gently until the white heavy whipped cream disappears into the mixture.
Pour into pan with crust that's been frozen for 30 minutes and cover with plastic wrap so it's sealed.
Place in the middle of the fridge
(For a handmade crust, make sure to measure 1/4 cup melted butter in it's melted form , not it's solid form. If the crust doesn't harden as you press down into the 7 inch pan , then you need more melted butter. Add 2 tbsp extra melted butter at a time until it starts forming better.

So glad I found I found this recipe! Honestly the best! It has the perfect amount of sweetness, but I personally added more double cream and it gives it such a nice lightness and fluffiness! 😄😄

I had to first of all make my own cream cheese as there are no supermarkets for 200 kms (half dirt roads), then I made it with cherries (thawed) and topped with Ice magic chocolate over the top of the cherries. Delicious. Great reccipe.

Hi! That’s almost 1/4 cup more. Perhaps it’ll not set as good, what you could try is leaving it longer in the fridge and see. Hope it helps!

Let it sit in the fridge overnight for longer than 8 hours and didnt eat it till 2 pm. And it set well! Going to follow your recipe to a T next time with the exact amount of heavy cream and I know he will still love it!
Didn't need to adjust sugar but I'm sure you could add a little more for taste. He actually doesn't like crusts on cheesecakes but he likes this simple one! I used pre crushed Kellogg graham cracker crumbs with melted butter for mine. I want to try digestives though someday! Thank you so much for this we want to try your baked cheesecake next!

What's the reason for folding gently instead of whipping the cream cheese and double cream together?

I used full fat cheese and cream. Just instead of normal sugar I used stevia.

Hi! Sorry to hear that! There’s 2 possible reasons for that. 1) The fridge wasn’t as cold (so it’ll take longer to set). 2) Did you use whipping cream of min 35%fat? Make sure the cream is really cold before using else it can’t help the cheesecake to set. I really hope you’d give it another go as many have made and loved it. Hope this helps!

Chill in the coldest part in your fridge, you'll be fine. If there's no changes/substitutions in the recipe, it'll set with no problem. No worries. Hope you like it!

Sorry to hear you’re having difficulties with the recipe. Did you follow the recipe exactly as is, without any substitutions? 8 hours are enough to set it in the coldest part of the fridge. In your case, yes place it in the freezer. Hope it helps.

Ankita Basak yeah that is the reason. If you only used 150g cream cheese, then the filling would have been too wet. The cream cheese is what firms up when you refrigerate it. Try it again with the full amount and it will work.
