How to Pickle Eggs 3 Ways - Golden, Dill, and Red Beet Pickled Eggs

  • If you haven't tried a pickled egg, you have missed out on one of the most unexpectedly delicious edibles! Here is my version of the recipe below! (The original of this recipe was found at PracticalSelfReliance.com by Ashley Adamant)
    GOLDEN EGGS:
    10 Hard Boiled Eggs
    1 Cup White Vinegar
    1 Cup Boiled or Distilled Water (The less chlorine the better)
    2 Tbsp Sugar
    2 Tbsp Salt
    1/2 Cup Onion
    4 Garlic Cloves
    1 tsp Mustard Seed
    1 tsp Celery Seed
    1 tsp Ground Turmeric
    DILL PICKLED EGGS:
    10 Hard Boiled Eggs
    1 Cup White Vinegar
    1 Cup Boiled or Distilled Water (The less chlorine the better)
    2 Tbsp Sugar
    2 Tbsp Salt
    1/2 Cup Onion
    4 Garlic Cloves
    1 tsp Mustard Seed
    1 tsp Celery Seed
    1 tsp Coriander seed
    1 tsp Dill Seed
    3-4 Fresh sprigs of Dill
    RED BEET-PICKLED EGGS:
    10 Hard Boiled Eggs
    1 Cup White Vinegar
    1 Cup Beet Juice (from your recently boiled beets or canned beets)
    2 Tbsp Sugar
    2 Tbsp Salt
    1/2 Cup Onion
    1 Stick of Cinnamon
    8 Whole Cloves
    8 Allspice Berries
    To make the Brine, stir the Vinegar, Water (or Beet juice), Sugar and Salt together over low heat until dissolved and well incorporated.
    In a very clean quart sized canning jar, place onion and all spices in the bottom. Pack with 10 peeled and washed hard-boiled eggs. Pour Brine over eggs until completely covered. Place lid tightly on jar and turn allow to cool to room temperature before placing in the refrigerator.
    Store in refrigerator of 1 week before eating (for fullest taste). Pickled eggs should easily store for up to 4+ months in the refrigerator.

    For anyone wondering, the reason cooking eggs like his works better than boiling is that the steam can reach a higher temperature than boiling water. My understanding is the phase change, from liquid to gas, produces extra heat. The quicker the outside of the egg begins to cook, the faster the air cavity inside the egg expands between the egg white and the shell, which causes the egg white to have less time to stick to the shell before it begins to solidify. This makes it easier to peel.The worst method of boiling eggs is to start them submerged in cold water, as this slow start allows the egg white to begin cooking before the air inside the egg expands and separates the shell from the yolk.

    I absolutely love pickled eggs with my beets always add a stick of cinnamon in my jar. Best ever. Been eating them for 70 years. Never can get enough.

    So fun to watch this! My grandma made pickled eggs for my grandpa every Easter. Must have been the beet juice variety because I called them purple eggs! I remember being little and looking up through the glass jar in the refrigerator during the week they were pickling. My grandma would always tell me, “not yet, they have to sit”. I always thought it was funny that the eggs were sitting and waiting too.

      I was always afraid to try pickled eggs when I was little. What was I thinking? Everyone else loved them but they were kind of spicy. My family said that the eggs might be too spicy for little kids. 😮

    The yolks turn green, if you overcook them. Bring your water with eggs to boil, cover the pot, turn off the heat and let them stay covered for 15 minutes. Then , open the pot , remove the egg, place them in iced water, let sit for 5 minutes. Peel and eat!

      I do mine in my Instant pot; steam six minutes; release pressure; cool in ice water or cold running water; peel.

    I just recently came across your channel, love old school cooking. I must say, What an amazing channel, I just made two different kinds of pickled eggs today! As I was watching I kept thinking “this lady seems like such a sweetheart”. Then you spoke of blessing others and I thought right away, I bet she is a Christian...and THEN the scriptures at the end..

    I’m from Louisiana so I like putting crawfish seasoning and a teaspoon of liquid boil to the jar. They are delicious. God bless you.

      @@shawnabeals9261 it's concentrated seasoning in liquid form that you pour into a boiling pot of crawfish, shrimp, or crabs to give it seasoning. You can find it in the seasoning aisle of your grocery store if they cary it. Its normally in small bottles the size of the little alcohol bottles they serve on airplanes.

    Sugar IS temperature dependent, so hot water will dissolve it faster and dissolve more of it, that is how you make sweet tea more sweet than adding sugar to cold tea. Salt however will not dissolve any faster nor dissolve more because the water is hotter. In fact the saltiest water is cold, at the arctic or the antarctic. Used to teach chemistry and earth science.

    I have never had pickled eggs before but just this past week I found a recipe just for soy sauce pickled eggs. Being an asian food lover I knew I had to try this recipe. I whipped it up and was able to get 12 eggs into a quart sized jar and let pickle for a day or so before I tasted them and boy, did I love them! They are great just as a simple snack or sliced as an addition to a ramen soup meal. Now that I'm obsessed with pickled eggs in general, I'm excited to try your recipes!

      It all depends on the size of your eggs as to how many you can get in a quart jar! I've never heard of SOY eggs before. My favorite is garlic mustard eggs!

    I had to wait months until my chickens produced a surplus of eggs to do this, and it was such a fun, satisfying project. I love that we can be creative with spices. I did one with slices of turmeric, ginger, and spicy serrano peppers for my husband.

    To take care of the “exposed” egg at the top of the jar, make sure the lid is firmly on and stack the jar on its lid for a few days. No air can get to the eggs that once were at the base. Then turn the jar right way up for a few days. This will mix in any spices etc. Throughout the jar. I hope this helps Rab

      Do you leave the eggs in the pot with the hot water for 12 minutes or take the basket of eggs out from above the boiling water??

    If you have an egg on the top, just put a scoop shaped onion slice over the top so the egg doesn't touch the air.

    I put my pickled beet eggs in a half gallon jar. I make mine the way my aunt Bobbie did with pickling spice, salt and sugar along with sliced onions and beet slices along with the vinegar-beet juice brine. They are wonderful! Love you added the scripture from God's Holy Word at the last of your video....👍👍❤

    The vinegar stops the eggs from shedding their innards if they break during cooking. The green ring around the yolk is based on timing - if you get a green ring, you’ve overcooked your eggs. The best thing I’ve found for helping remove the shell after cooking is baking soda in the water. Changes the structure of the shell somehow so it just slides off once cooked.

      I have tried the baking soda but did not help peeling the shell.
      What works for me is putting room temp eggs directly into boiIling salted water.
      Water boils at lower temperatures depending on your elevation. Water boils at 98°C where I live, so boiling times vary a bit.

    I believe that the green layer around the yolk forms because of overcooking the eggs.
    However, the vinegar helps break down the calcium in the shell and makes it more brittle so it makes it easier to crack. I tried a new method today of poking a hole on the flat side of the egg with a little needle and they all came out beautifully and easy to peel. I boiled them also.

    Another tip for those that have the regular jar lids/rings, don’t use those. Use the plastic lids instead. The vinegar will rust the metal lids and you don’t want that flavor in your brine 🤮

      @@ReapingTheHarvest The plastic lids are safe. You can buy the lids to fit the canning jars in the same area canning supplies are sold. Mayonnaise jar lids fit also like someone mentioned.

    I love to cut the eggs in half, pop out the yolks and keep them in another jar. Then I soak the whites in pure beet juice from a can of pickled beets over night. Next day I make refilled eggs by mixing the yolks with a little mayo and relish then filling the already pickled white halves. Pink, pickled, refilled eggs, yay!

    I do all three of these recipes and I did full jars full of pickled yellow wax bean and full jars of onion. Full strength vinegar will make these shelf stable and will not need refrigeration. They will also last way longer than 4 months if the need arises. This we found is a great way to preserve our surplus eggs. I do vinegar and salt/pepper eggs as back up to supplement our dogs food when our flock is not laying. My next adventure will be jet black pickled eggs, let me know if you try them in straight balsamic vinegar.

    To prevent the green around the yolk, once the eggs are cooked drain them and shake them around the pot to crack the shells before filling with cold water. This allows sulphur to escape and prevents the discoloration.

    Great tip for the boiling (steaming) of eggs.
    If you just wanted to be lazy, buy a jar of pickled beets, eat the beets, then put the eggs in the jar with the leftover juice, and voila, pickled eggs.

      Yes, and maybe pour a bit of the brine on top of them and let sit and soften for while before adding the eggs. Also, assuming she was using large eggs, this might be a recipe where smaller eggs might work better. A regular large supermarket egg weighs about 2oz, vs 1.75 and 1.5 for medium and small ones. This way you could fit more eggs in the jar, and if you do need to take one out, a bit less space is wasted at the top.

    Way to go Christa. Plan on getting some chicks next Spring and want lots of great egg recipes. Didn’t know there were so many varieties. Think I might like a Mexican or Southwest, Italian or German flavor using herbs and diced from those regions. Thank you for sharing the scriptures and encouragement from the Lord!

    To avoid the 'green ring' around the boiled yolk, plunge the boiled eggs directly into cold water to stop the cooking process. It warms up so after about a minute, drain and add more cold water. Tried and tested.

    My hard cooked eggs used to get that "green" outer layer on the yolks if I cooked them slightly too long. I finally heard of a good timing method that fixed that problem. This technique is my next experiment :) Thanks for sharing, Christa! God Bless you and yours

    Gently smash, or break open the garlic bulbs at least 15 min before adding. It allows the health benefits of the garlic to start doing its thing.

    My father would buy pickled bologna and when it was gone, put hard boiled eggs in the remaining juice. That was 25 years ago. To this date, I have not yet found a better pickle solution.. I recommend trying the pickled bologna route at least once. Your amazing....

    I make pickled eggs with the beets in the jar so you have the beets to eat along with the eggs. They turn very dark red and taste wonderful.

    Hi Christa, greetings from Australia. I was just thinking of watching one of your clips and I was pleasantly surprised to see a new one, thanks. I've made pickled eggs, at my place they don't even usually last the waiting time 😂 I use ginger slices, juniper berries, peppercorns, bay leaf, orange/mandarin peel, cinnamon stick with himalaya salt, and ACV. I've watched off grid where they use a sunsheild/solar oven for about 45mins, to cook their eggs; without water. Stacy says the eggshells come of easily; though I've never tried this it sounds like a great idea.

    Take a toothpick and push it through the egg before you drop them in the jar and then water bath and they will last for a very long time,my grand parents had eggs that were years old and were great.
    I like mine to set for a few months before I eat them to soak up the flavors.

    The green on the outside of the L is because they were over boiled. Adding vinegar helps to seal the egg if one would crack.

    Maybe I’m tired, I counted 9 eggs in the first jar. No matter, I’m going to give these a try. A co-worker makes beet pickled eggs with just the leftover juice from pickled beets. That was the first time I’d heard of them. So pretty !

      Suzy, you are correct! After filling it with 10, the top egg was just a little higher than I wanted so I took it out and left only 9. I hope you love yours. They are pretty and delicious!

    We love pickled eggs and I can't wait to try the 2 light colored ones. One point though...they would NEVER last 4 months in this house. They are lucky to last one week! Thank you for the tips.

    I am making the dill pickled eggs as I type. I was purposely heavy handed with the herbs and spices. I also added a sliced jalapeno for an added kick! Thanks for making and posting this video.

    It's more about the age of your eggs than it is with the method of boiling. I have never had any luck, peeling eggs, that are younger than 1 week old! Also, an ice water bath for 5 minutes, after boiling, will allow the shell and membrane to come free of the egg. Also, You CAN traditionally can hardboiled eggs when you use a higher brine mixture. We always use 3 cups vinegar to 1 cup water! We store them in our pantry for up to a year without any issues. Botulism is introduced ... it's doesn't just materialize! Where people get in trouble is when they poke their eggs before canning. This introduces a void that the brine cannot penetrate.

    I'm trying pickled eggs this year because my chickens are laying like crazy. 👍 a good problem. I enjoyed this video, and I love your grandma is in your kitchen. I have some the same since she left us 💖 I use her measuring cups, crocks, wooden spoons and her dinner plates. It makes it special.

    Grew up in PA and we had picked beet eggs all the time. Cinnamon and clove. I will try it with the allspice added! It all looked delicious! God bless!

    I had to make a lot of food in a day to last the week and one of those things was pickled eggs. I used the pickle jar and put 18 eggs in it. The brine I would heat again with garlic cloves, small white onions and store bought mix of whole spices like what you put in with your eggs. Always had guys swinging by at lunch time to see what was for lunch. Yep.
