Then you can take the juice, add it to a pot appropriately sized for the amount you use, bring to a boil, add a bit of tapioca starch (or corn starch slurry) and cook over a simmer until thickened. It’s perfect as an ice cream topper, yogurt or oatmeal stir in, filler for a fresh strawberry pie…
Fun fact: DQ uses a similar recipe for their strawberry sauce. No lemons and more sugar. We've been making this for years... we cut the sugar down to 1/3 cup. The sugar dissolves in like 2 days, tops. We use it for icecream (it freezes really well)

This kinda reminds of the times me and my grandma made strawberry freezer jam, which is exactly what it sounds like. It was freshly made strawberry jam put into a freezer to give it a jelly-ish that some jams usually have. It was the only kind of jam I’d use it was perfectly sweet in so many ways and wasn’t always too sweet for my taste due to my sweet tooth. It sucks that my family is so broken that I barely see her as well I don’t even really know most of the people in my family which sucks when I go to family gatherings or party’s for somethin like an event. Still miss when she would keep us at her house anytime my mom’s worked long hours or we would just sleep over there as well, make pancakes in the mornin :3
In the bartending world they call it oleo saccharum. it's widely used to get the oils out of the peels of citrus fruits because those oils contain basically all the aromas and flavors without the bitters of the rind, so you can make great simple syrups with them.

To make this healthier, soak the strawberries and the lemons in water with baking soda to get out some of the pesticides. Lemons need to be thoroughly washed, and preferrably organic, if you're going to use the peel for food
Did u store it in fridge? Because mine always last until a month (bcs we finished it within a month 😂) with no prob at all. Also u gotta make sure the container u use really really dry before putting the ingredients in.
The mint should be fresh and added to your immediate beverage, but probably not the jar storing the strawberry slurry. Herbs can deteriorate quite quickly, especially herbs that are not dried.

That’s just boiling it down to a compote. Macerating is when it’s done raw without boiling.

Im 49 when I was child growing up in Baton Rouge, La., my grandmother use to do this every year when strawberries were in season.

I believe you could definitely freeze it for later use. I’ve done it with just strawberries and sugar and it lasted a few months in the freezer.

I might open it up and mist it with vinegar occasionally to keep the mold out.
