      Do we really have to add sugar? Will it not be sweet without sugar? Actually background of my question is that I am trying to quit soft drinks and looking for alternatives which are least sugary yet delicious.

    Don't throw away the strawberry pulp! You can combine it with a cup of sugar and the juice of half a lemon to make some strawberry jam! While some of the flavor has left the strawberries, a bit of sugar goes a long way into rejuvenating that flavor. It won't be the prettiest jam or the best in texture, but definitely works as a spread!

      Also, if anyone plans to make this for their cravings only. Don’t boil the fruit and use the korean way instead, this is because the heat destroys vitamins in the fruits. Its okay tho if you just want the taste of the fruit.

    one bit of bad advice there was discard the the actual strawberries... put them in a blender with some sugar then spread them out on a fruit roll up tray and make fruit roll ups out of them in the dehydrator

How long does the syrup last in the fridge? I know the sugar content would prolly be a hindrance but is it at all possible to freeze leftover syrup?

    I made this some time back, i think, like back in late May-early June, it was amazing!
    If you happen to love those Pepperidge Farm Verona cookies (the cookies with strawberry jam spread in the center of each cookie), the jam from that brand of cookie is exactly what my attempt at making strawberry soda tasted like. I don't know about anyone else here, but I loved it!

    We chopped up a bunch of strawberries into a jar, poured in a bunch of sugar, closed the top and shook it up. In about an hour the sugar was pulling the juice out of the strawberries. I just shook it up every once in a while and kept it in the fridge overnight. In about a day it was done. I just strained the clear red liquid off and ate the berry pulp in yogurt. I added a touch of vodka to the syrup as a preservative and it kept in the fridge for weeks and tasted like sweet fresh strawberries.

      sadly we shit and piss in clean water that if it came out of a sink it could be drunk. but for what ever reason we put clean fresh water in our toilets. why we don't use dirty water that has tons of chemicals to make it smell and look clean i don't know......

    My 20 or so strawberry bushes are just starting to make strawberries, cant wait till they ripen so I can make this and some jam. Some are just finishing flowering and some are just about to make ripe strawberries so I have like a month of just strawberry heaven on my hands shortly.

    Why discard / waist the pulp? Strawberries (including the seeds) provide good sores of natural fiber. Try blending the pulp with natural yogurt and then flavor to taste with some of this yummy syrup.

      Jeffrey Wong Probably not a good idea to eat strawberry "pulp" since after using it for the syrup, it becomes either flavorless or really sour, and it doesn't keep much of it's strawberry flavor.

      This video shows you how to make strawberry SYRUP that CAN be used to make strawberry soda. It’s a fantastic simple recipe to follow and no one is trying to “harsh” that fact, or change the recipe. What you seem to be overlooking, is that this recipe is for simple CLEAR strawberry syrup, which has
      so many other uses. Think cocktails with or without liquor, beer or hard cider.
      Think soft drinks such as milk shakes with a scoop of homemade vanilla ice
      cream or deserts such as sponges, cakes, creams, sauce, ice cream and sorbet;
      think breakfast such as yogurt and pancakes… in essence the list of uses for
      this syrup is endless. However, the implied question in my post was simply; why “discard” the pulp when it can be used as a great source of natural fiber in other recipes? Or put another way; IMHO it’s a natural, good for you, healthy, fibrous bulking agent, which can and will make a number of other dishes go a lot further at no extra cost, so why throw it away?

      Brian Kathy well for the record he did say you COULD use the strawberries themselves in it by mushing them up i think through the siv but it would make the strawberry syrup cloudy .. and your soda kind of pulpy probably..if you are fine with that.. that's fine.. flavor wise shouldn't be too different..

    Thanks for the syrup recipe! I always love your recipes for an alternate way to prepare things.
    I cleaned out my small chest freezer and finally removed all the strawberries, raspberries, and a few (UFO) unidentified fruit objects stored in the bottom area. I thought they were really too far gone since they already had the 'protective ice' around the fruit and not sure which century they were put in there. I was sure they would taste like wallpaper paste. Nope, cooked them in big pot, added the sugars (sugar and/or honey) and added a cornstarch paste (cornstarch in a bit of water). Very tasty and lovely dark color so cooked it well until it thickened and poured into sieve to let drip then poured into Pyrex container with spout to transfer to jars. The last bit with the thick fruit I used a hand blender (or regular blender) to make a smooth thicker mix. I wanted thin and thick syrups for variety from the same batch. It all gets used.
    Thinner syrup went into 5 jars (250ml or 1 cup jars) for tall iced drinks and the thicker batch can be used for waffles and pancakes. That made 6 (1 cup) jars.
    The thinner I will use with my carbonated soda (iSi) system but can also be used for pancakes. They are all canning jars so they are cooling and will keep in the freezer. So easy to thaw one jar in fridge and use it up when I get the craving for my recycled fruit.

      yes i think so. I think it would be better to boil the raspberries and mash them. same ingredients just the fruit is raspberries not strawberries.

    Pleasantly surprised. Used some old strawberries, followed directions. A little tip add the juice from 3 lemons to syrup and wow is it ever amazing. Never tried with club soda just added to water and it was fantastic

    I made this a couple days ago. It turned out so freaking good. I used a 1/2 & 1/2 mix for the soda though. My syrup was just way too sweet for any more syrup than that.

      sugar is not only in there to sweeten the syrup but mostly to make it preservable.

      Joy Du parry knifes are typically used for decorative cuts or for doing what John is doing, removing scrap parts from foods and cutting up small fruits and veg, they're small so they're easier to control, if John cut himself with that (unlikely) it would show he has poor knife skills

    Good afternoon Chef, I have to tell you that I love your videos, recipes and sense of humor. And how you put simplicity back into cooking. From a total disclosure perspective, I must tell you that I am a graduate of the CIA, not the government agency, but the Culinary Institute of America in the early 1970s. After graduating there, which was in 1973, I went into the military - was not a cook....hahahaha. After the Army I went back to college and eventually become a FBI agent which I did for 25 years. I am of course retired now but still bang the pots and pans around. So, again, I wanted to say hello and tell you how much I enjoy your videos. And.....after watching your vids on making lemon and strawberry syrup, would you have one for the BEST summer time drink there is....raspberry?? If not, I will just make one up for me. DP

    Chef John, I love your channel and your videos.... whenever I get tired of cooking and making the daily meals, I dive into your channel and it has always brought a smile to my face.     Tried making it and absolutly loved it. I also reduced some of it down, mix it with a little bit of white crema di balsamico and used it as a delicious ice cream topping. :)
