    Not to be patronizing but it's always a good idea to invest in a rubber whisk, or in my case I just use a wooden spoon for everything. Metal will tear up the bottom of the pan and leave bits of it in your food, I've learned this the hard way lol.

      Coated cookware has to be treated properly as stated by MiloSpot13. Teflon is a toxic substance once it's been disturbed by metal implements.

    My mom always used the back edge of the knife, not the blade edge, to clear the cuttings from the cutting board. It helps keep the knife sharp.

    Salted water--teaspoon at most. And drip a little olive oil in there as well. Just a tip.

    My paternal grandmother was Italian and she always said she new when white sauce was done by sound. When you poured the sauce into the pasta I could hear it was perfect.

    I don't remember seeing a cooking video with a chest mounted camera before, but after seeing this with the inset view, I think it's a good format.

    Hi Erika. Great job. A little lemon can go a long way when heated. Lemon can increase in intensity. You can always add product as you cook.

    You could get one of those small island on wheels for you to use as extra counter space. Just a thought. You can place the flat surface of the knife on the garlic and apply pressure. It will make peeling the garlic easier.

    Hi Erika, your situation reminds me of a situation I was in a long time ago. I was in charge of doing the cooking one day a week for my housemates. I volunteered for the shift because I honestly thought I was a good cook. But before long reality set in and I was feeling overwhelmed and paralyzed. I know this next part will seem comical, but one day I was standing in the kitchen with not much time left before meal time and no ideas on what to do. Then I happened to notice that there were several cookbooks in a nook in the kitchen. And that was the end of my struggle. Turns out I was an amazing cook like I thought, I just needed some direction / recipes. Your dish looks good!

    Save that cheese rind. Next time you make tomato sauce add it in for flavor. Then toss it out. Adds a richness to your sauce.

    When i did my Adhd investigation they let me cook dinner while watching.. Thats a good way to see if someone has that.. And after watching you cook i just want to say, welcome to the club!! ❤ I loved everything but when you stured your non stick pan with that metal thing i was forced to look away and hold my ears! 😂❤🇸🇪

    Since you're using your stove as a work surface, maybe it would be useful to get a big rectangular cutting board that's exactly the size of the stove. Or simply a wooden board of the same dimensions. Then when you want to use the work surface, you could just throw it on the stove. Maybe it would be easier to keep everything clean and not damage the stove. Maybe even a DIY project for the channel :)

    cutting teh cheese into smaller parts really helps with grating it saves your wrists from getting carpel tunnel

    Anohert tip when you melt butter let the moisture evaporate when you want a good sautee same with searing meat especially with putting a sear on meat you dont want to let the meat boil in juices so the moisture content as well as searing in small amounts to keep it from being crowded in the pan is the difference between a good dish and the BESUSUSES dish!

    I was going to warn you about using metal utensils on the pan with the teflon-coating, but it turns out i am just really old. When these pans first came, we were warned about not using metal utensils on them, and throw them out if the coating got scratched, because it was carsinogenic. I looked it up now and apparently it is completely food safe. I was kinda hoping i was not the only one that reacted to this. Anyone?

    Emulsified means turning it into an emulsion which is a mixture of two or more liquids that would not normally mix, like oil and water.

    Tip. Weigh the cheese first, then greate. Also air fryer recipes are a thought. Keep it up 👍🏻

    I don't know if it's better, but most people add the pasta to the sauce pan, instead of the sauce to the pasta pan like you did.
    If nothing else it's easier to clean up because you don't have gooey sauce in both pans, and pasta pots only have water so you can usually just rinse them.
    Also, add a little pasta water to the sauce to thicken it.

    I suspect this has been suggested many times before, but are there any surfing or outdoor clubs or groups in your area that you could join? These often have organized outings to go on that can help you to do something without having to plan it yourself, and they allow you to meet new people in a low pressure way.

    If you were like "How to make [name of recipe]" or just doing a "POV: making [recipe]" then maybe talking thru it wouldn't be well received by the audience but i enjoyed the format

    lol you are doing fine. I like the picture and picture setup here. I don't think anyone else is doing this. Its either one camera or the other. Also STAHP being so negative. Do you know how many THOUSANDS of hours it takes for someone to be an accomplished chef? Like anyone you see on youtube? People in high powered positions such as Athletes, CEOs, and pretty much anyone in a competitive space uses affirmations because words have power. Speaking is spelling, which means you are "Casting" spells. If you continue to say negative things you will believe that, especially subconsciously. If you speak positively then you will believe that. Its really powerful. You may not believe it at first but if all the worlds top people are using affirmations then they must work. I use them and they work for me.
    Make a general plan of what you want to do with your videos. Start small with one week and see how you stick to the schedule. Then expand from there, experiment with different things and watch your metrics and see what works with what you like.

    Cheese! Also, don't get ripped off by products labeled as "Organic" because all organic means is "carbon-based" and the same products not labeled "Organic" are usually considerably less expensive.

      The definition of "organic" is different for food than chemistry, and definitely means more than just "carbon-based", usually it means produce is grown without pesticides, but it's tricky. "Organic" doesn't necessarily mean "better" so you have to be careful so you don't pay extra for nothing.
      Not all "organic" stamps even man the same thing.
