I bring one jar of chocolate spread per day of the trip....
On a serious note, I recently discovered that proteins apparently take 3 days to be processed in the body and be available for "deployment".
So basically if you want to optimise your diet for muscle repair, its not what you eat today that is most important, but what you ate three days before the exercise.
This is only really relevant for short trips, but it made me realise that what I eat the week before I go camping is probably more important than what I eat WHEN I am camping.

Canoe trips, I tend to bring too much in the way of lunch and snacks, trail mix, energy bars, salami, cheese, crackers. Otherwise, it's oatmeal and dried fruit for breakfast, fresh food dinner night one, then freeze dried dinners. I shoot for about 3,000+ cal per day, 1.5 - 2.0 lbs per day. I also bring 4 L wine bladder, and 1 L of tequila for the week.
Canoeing - you can bring real food. Nice.
Depends how many days, how much physical work, how hot or cold it is expected to be and if I will be supplementing with catching fish.
Catching fish is a nice option.

What’s the fat to carb ratio we need to pack? I heard that we need to add some fat in the diet or our bodies will not be able to convert the carbs to energy?
Fat caries about 2x the amount of calories that protein & carbs have. Per weight, fatty foods are more worthwhile.
Yes, rabbit starvation and lean trout starvation are a real thing. Stay safe out there.
