Informative and entertaining video. I tenderize with mallet, marinate them at least 3hrs in olive oil, garlic powder, onion powder, bit of soy sauce, tiny dash of apple cider vinegar. Season after grilled with salt and pepper
The three most common recipes I have done: 1. Chicken fried steak ... think fried chicken. But you are coating the eye of round instead of a piece of chicken. A small amount of oil in the pan, just enough to go about 1/4 - 1/3 the way up the side of the steak (make sure the oil is hot before you add the steak). Serve with mashed potatoes, veggie of your choice and a really good country gravy. 2. Steak Diane ... Cut up mushrooms, onion, shallots and a little bit of garlic.. add to a large frying pan and saute until barely tender. Remove and set aside. Add the steaks. Sear on both sides over high heat. Add beef stock and red wine. Reduce heat when alcohol has been burn't off. Return Onion mixture to the pan. Cover and cook until meat starts to get very tender (20-30 minutes). Remove the meat. Stir in cream to the pan (or whole milk for lower calorie). Return meat to the pan (cover pan) to complete cooking (about 10 - 15 minutes). Best served with par-boiled, halved then sauted (to golden) in olive oil & butter potatoes (salt & pepper to taste) and veggie of your choice. After plating, add generous amount of the sauce/gravy over the meat. NOTE: a variation of this recipe can be dome without the cream. 3. Beef Marsala ... Similar to Steak Diane, yet with Marsala wine and chicken bouillon ... more shallots, no onions... and the cream is a must. NOTE: this is a variation of Veal or Chicken Marsala.
Too bad I can't use direct flame anymore but I would have loved this years ago. The sear box is something serious. I'm going to try this soon on my new electric grill. Thank you for the vid.
I don't think I've cooked eye of round. I usually like very thick steak because I like it medium rare. But that looks so good that I may need to give this a try. I love how the grill has a desperate box to put those marks on it I've never seen that. Very cool. Yum!
Cook the eye of round like a tri tip. Smoke it until 115° let ot rest for 5 mins and sear for 45 seconds per side. After that start the smoking process again until it reaching EXACTLY 130° internal. Let it rest and slice thin for delicious beef.

This is NOT a method of preparing any type of thin protein unless you're craving run-of-the-mill jerky. First of all you do not apply such a low and slow heat to thin cuts if your goal is not a mouth drying, throat scratching overly-seasoned jerky. The best method for any cheap, thin-cut and usually boring protein is big heat, big NATURAL flavors (i.e. the cow part) and time to rest to re-incorporate the juices/flavors of the protein. After all, Italian seasonings don't go on everything and if I wanted a mouth full of it I'd eat it off a spoon which is basically the end result here - or maybe a disposable and biodegradable drink coaster. Could be onto something after all but as far as a "for human consumption" product I'll just leave it at; my not house trained beagle eats better than this. However this poor animal deserved a much better utilization in the end. Shame.

I have cooked them on my George Foreman grill inside after marinating them in some seasoning.
