Pre bake oven and pre bake pie shell at 425 for 15-20 min ,
Bake pecan pie at 350 for 45 min and come out perfect

How do you know when it’s done, mine didn’t have any jiggle but it was gelled together and the crust disappeared,
Did u par bake the crust first ? u know when it’s done if u shake the pie gently and it should give a little giggle in the center but have stability.

I believe she said 350 degrees for 40 to 45 minutes. The pie doesn't get done at 250 degrees at 40 to 45 minutes.

Yes I did to prevent soggy bottom crust! it’s called Par baking or u could also dock some holes in the crust to let air escape

Try 1/2 tsp flour in your pie to set it. That should work.

45 To 50 mins on 350 degrees oven to know if it’s done the pie should be firm not jiggly
