I read Arc 5 and I remember that he intentionally challenges Rein to a duel as a test of his strength. His face looks that way because Garfiel is exerting himself to his fullest after he realizes just how big the gap is between himself and Reinhard.

The main theory right now is that Emilias mother is Minerva, the witch of wrath, aka the blond one. The main evidence is that Echidna mentioned that she is fond of Emilias mother. She's not fond of many people, but one person she is ACTUALLY fond of is Minerva. And there was also that whole scene with Emilia and Minerva in season 2 where Minerva didn't let Emilia turn around and see her face.
It was revealed so early in the novel, they probably just felt like it didn't fit thematically to reveal it at that time in the show. They'll probably have the reveal in this season so the Japanese references make sense.
