    INGREDIENTS
    250 g of strawberries
    2Tbs of sweetener (stevia, monkfruit, erythritol)
    8g gelatin + 15 ml water
    60 ml/ 1/4 cup water
    After boiling and draining the strawberries, approx. 100ml of liquid results.
    The warm strawberry juice is mixed with the bloomed gelatin until it melts. Drip the juice into a tall container with neutral-tasting vegetable oil that has been in the freezer for an hour. Strain and wash well with cold water.

    Ingredientes.

    El zumo de fresa caliente se mezcla con la gelatina florecida hasta que se derrite. Conducir el zumo en un recipiente alto con aceite vegetal de sabor neutro que haya estado en el congelador durante una hora. Cuele y lávese bien con agua fría.

    Food Science at its best. Once tried it with mango. I used MCT oil and they came out super fine; just like the classic tapioca boba but without all the maltodextrin. Thanks for the idea. I so love your channel. You've earned yourself a subbie

      Hi, you can use any cooking oil that is liquid at room temperature, I used sunflower oil. The taste of the oil will not remain on the pearls, wash them thoroughly with cold water afterwards, and the oil can be reused.

    The oil should be freeze or the container we put it in ?

      The oil must be very cold, so that the gelatin in the syrup solidifies almost instantly. A vegetable oil, for example sunflower oil, will be very cold but still liquid after an hour, an hour and a half in the freezer.
      If you don't have space for a tall container in the freezer, you can cool the oil in any jar, then pour it into the final container.

    I didnt let the juice cool enough, so I had a big blob of jello. I just cut it up and it worked fine.

      Hey, glad you figured it out. 😉 Next time, start with just a few drops so you can adjust the juice temp. Maybe the oil should've been colder too, depending on your freezer and room temp.

      Hi, they are ok for a few days in the fridge, but in the freezer the gelatin changes its texture a bit, you may not like it after defrosting... you may try with a few pieces, see how you like it 🙂

      Hi, an hour at room temperature should be ok, if it's hot or you plan to keep them for more than an hour, you can add 1g of gelatin extra, just to be on the safe side.

      That's not sugar, it's sweetener, you can use erythritol, stevia, monkfruit, etc.

      Hello, you can replace animal gelatin with vegetable gelatin called agar agar, it must be boiled on low heat with fruit juice for 3-4 min. Use about 1/2 teaspoon per 2/3 cup of juice. Hope it helps!
