  • Today we recreate one of my favorites from Taco Bell, the Beef Meximelt! It's delicious with savory beef, melty cheese, and fresh bright pico de gallo. It's a really easy dish that tastes incredible, make this for your family and let us know how you liked it.

    4 roma tomatoes diced
    1 jalapeno diced finely
    1/3 diced white onion
    1/3 cup cilantro
    2 tbsp lime juice
    Salt and pepper to taste
    The BEEF
    1 lb 80/20 ground chuck browned and drained
    1 tsp cumin
    1 tsp smoked paprika
    1 tsp chipotle chili powder
    1 tsp ancho chili powder
    Salt and pepper to taste
    Cook meat and seasonings for about a minute to toast spices. Add in 1 tbsp of all purpose flower. Mix into the meat and cook for about another minute to cook out the raw flower taste. Then add in 1/4 cup broth and cook, stiring frequently, to thicken broth and create a nice saucy beef filling.
    Take a soft taco size tortilla, add cheese and beef, then microwave for 30 seconds. Add your pico, roll and enjoy!
