  • BKC Fam! I'm trying something new this time. I came across a new seasoning by ‪@McCormickVideos‬ called Nashville Style Hot Chicken Seasoning. I was intrigued, so I decided to buy it and give it a try. I rubbed the seasoning on a few chicken leg quarters and grilled them on my ‪@Char-Griller‬ Smokin' Champ. My cook was fueled by lump charcoal from The Good Charcoal Company. I was pleasantly surprised with the result. McCormick did a great job with this one! Check out the recipe and give it a try for yourself!
    Recipe
    3 Chicken Leg Quarters
    Nashville Style Hot Chicken Seasoning
    Lump Charcoal
Prep the leg quarters by removing any excess fat or skin. Peel the skin back, but do not remove it completely. Season the exposed meat liberally with the Hot Chicken Seasoning. Replace the skin and season on all sides. Light the charcoal and prepare the grill. Grill the chicken over indirect heat until the meat reaches 175 degrees on an instant read thermometer. Place the chicken over direct heat to crisp the skin on both sides. Keep a watchful eye so the skin does not burn. Once the skin is crisp on both sides, remove from the chicken from grill and let it rest five minutes before serving. Enjoy!

I didn’t keep them over direct heat for very long. My pit was running very hot, so I cooked indirect almost the entire cook. I crisped the skin on both sides over direct once I got them to my desired temp.
