You guys should put in a fold out table on the back of the cabinet that faces outside. Lots of van-lifers have features like that and it seems to work well!

Azalea looks so adorable with her little pony tails. She is so sweet wanting to be a big help to her Daddy. The little ones watch their Mom and Dad so intensely and learning so much. The van is coming along nicely. Looks like you need to take the trailer and stock up on pallets. With your puppies around watching over the two little girls just makes me smile.
I used one of those plug-in coolers in the truck for years it will only cool to 30° less than the ambientif you don't put some kind of air condition vent in there that cooler you bought will not cool your food down and keep it in safe condition

The girls are just TOO CUTE! Frig needs to breathe! Don't forget to leave adequate venting in that cabinet. You talked about shutting it behind cabinet doors. Maybe make those doors as frames for inserts of some of that stamped aluminum decorative screen stuff. Too bad there isn't a simple way to let it breathe outside air, so extracted heat doesn't heat the cabin (good thing in winter - ;-).

When you first put in the plywood base I thought, "Oh no! That looks terrible with all that other beautiful wood!" Then after it was sanded and finished, though, I agree it looks amazing!

You might want to consider ventilation for the cooler cabinet - the heat it will be outputting, no matter how little, should be allowed to escape that small enclosure.
G&E are doing a van, and B&J are doing a camper, any future family camping plans? P.S. I would use one of them small spaces for a "hidden safe" ;-)

First class project! As Mom was walking away with her back to the van, Azalea started to shut the side door. I have vivid memories of a child who shut a car door on his fingers!

I looooooooooove this video. Whoever did the editing, you are a rockstar. The storm sequence was so beautiful! seriously loved it. Ok back to the van. The empty space at the bottom of the fridge box that you said could store the tire iron, I suggest shoe storage instead. You could make the bottom slats facing outside have a hidden hinge so you can access it from outside if you wanna get fancy, but in a van you usually have shoes all over the place, taking up valuable floor space when you're inside. And they're usually pretty dirty from being outside. And if you don't want to be constantly cleaning the floor, getting dirt everywhere, you can just take them off on your way in, then put them on, on your way out, easily. NEXT thing, the fridge top not opening completely. yikes. I know. Expanding the height of the box doesn't sound like fun, but from a fellow alpicool fridge user who also built a box around her fridge (aka me), having to hold that lid open, dig around inside the fridge, pull things out, put things in, reorganize AND balance a baby on your hip? whew that's a tall order, I did it too! (minus the baby) and that got old in 5 days. That lid will stay open, but not if it's blocked. You could give it a try for awhile, but my prediction is opening #7 through 10 will turn you into #TeamTallerBox You could remove the one slat that is blocking it from above and access it that way, with the box lid removable or on a hinge, which could work. You won't be able to see into the bottom of the fridge from the side. Or tilt / pull it out since it's boxed in. Either way, exciting stuff. See ya on the road :)

As soon as she’s big enough to hold a power drill or tall enough to reach the lathe, she will be building the cabinets for you. At first, when she began to crawl and pick up screws and bits of wood, I have to admit I was a tad alarmed, but seeing her now and how she is so ‘knowing’ I needn’t have been concerned at all. Well done you are a smashing little family.
