- Bistek Tagalog is the Filipino version of Bistec or Beef steak, a dish made of strips of salted and peppered sirloin beef, usually flattened with a meat tenderizing tool, slowly cooked in soy sauce, calamansi juice, garlic and onions, a specialty of the Tagalog region.[1] It is known in the Spanish-speaking world as bistec encebollado or bistec tagalo. It is usually Anglicized in Philippine English as "beef steak."

Is Sirloin better than top round beef to use in Bistek? Outside of Rib eye and Prime rib, I don't know the best grades to use. Thanks for your recipe, looks very good.
Sirloin and tenderloin are both better to use in Bistek. Sirloin is tastier than tenderloin however it takes time to tenderize, tenderloin, on the other hand, doesn't take time to cook, but less tasty than Sirloin. Hope that helps. Thank you for watching..:)

I cooked this for my daughter when she came to visit me a few days ago and now I'm cooking it (again) para i-show off ng mister ko sa mother nya LoL

That’s precisely the way to cook Beef 🥩 Steak you want to taste the citrus 🍊 of the calimansi mixed in with the soy sauce and garlic 🧄. You didn’t add sugar and so many Filipinos add sugar which eliminates the pure goodness of authentic beef steak 😃

Im trying ur recipe now since wlang kalamansi dto sa brazil, lemon ung ginamit ko and ung toyo ko ay kikkomamn kc walng datu puti dto. Iovernight ko sana ung marinated kaso gutom n kc ako kaya mga less than 2hrs kinaya dhil gusto kona syang kainin sa dinner

What was the purpose for the strainer don’t you want to hold the marinade?
When you sear, you want the meat as dry as possible. With a long marinade, the flavor has been absorbed well into the tissue anyway. A lot of moisture on the outside leads to more steaming, less searing usually.

My wife has to substitute lemon most of the time because calamansi is not always available at the Filipino market

What is the measurement in cups for 13 calamansi? I'm in the US and will have to use lemons or limes.

check your local Asian stores. if any are owned by Filipinos that may carry calamansi.
you can find small calamansi trees in buckets in people's living room or on their deck. worth having.
but of course using lemon and lime is an option.
