- How to make chocolate profiteroles and master choux pastry! I remember staying in an old Irish guesthouse when I was growing up where a dessert trolley was rolled around the dining room after dinner and you could pick a dessert of your choice. I could never resist creamy profiteroles smothered in a warm thick chocolate sauce.
Ingredients:
For the Choux Pastry:
60g salted butter
80g plain flour, sifted
3 large eggs
130ml water
For the Chantilly Cream:
200ml whipping cream
2 tbsp icing sugar
1 tbsp vanilla extract
For the Chocolate Sauce
60ml single cream
30g caster sugar
50g dark chocolate (70% cocoa solids), finely chopped

This brings back memories of The Great British Bakeoff/Baking Show. Chou pastry and good profiteroles are almost always a feature of pastry week.

This is my fav childhood treat as well. Gran used to make it all the time! Here in South Africa we call it "poffertjies" which is derived from the Dutch treat "Hollandse poffertje" which is not the same thing, but it's where the name comes from.

Oh, profiteroles. Delicious & classic. One of the first things I learned how to make when I started teaching myself how to cook. Except in my case, the first ones I ever made were Swan shaped ones. Leave it to me to always be fancy. lol
Definitely no worries in this about over mixing the dough like you get with most quick bread recipes! 😂 I'm gonna have to give this type of dough a try!

We had them a bit larger, split in half, filled with vanilla ice cream and drizzled wild hot fudge sauce. The best!

For hot summer days, replace the whipped cream with vanilla ice cream. Just cut the choux sideways and insert. And of course the chocolate topping is mandatory!

These profiteroles --> 🔥😱
My mom used to make éclair with pastry cream custard and chocolate icing, and cream puffs with whipped cream and a dust of icing sugar. Profiteroles are plain choux pastry soaked in red syrup mounted up into a mountain and drizzled with more red syrup. Any which way they're all good, thanks.
as a baker i think pate a choux is the easiest of the doughs to make. also fun to do

We have many kind of these Bossche Bollen, But the one and only comes from a shop in the city called "Den Bosch" or "s'Hertogenbosch" Jan de Groot !
When we lived in a place 200 km away, we drived once a month to this shop.
The "Bossche Bol" exists from 1798.

OK I think I get it now I guess this is the ingredients to create a heavy cream from scratch?
@Nicky L no but, in his video when he was making the cream, he just had a bowl of heavy cream and added sugar which didn't match to the longer list of ingredients mentioned in the description ....
Having googled it, the list of ingredients were how to create your own heavy cream I assume
Your recipe say milk when it wrong in video you cream
The profiteroles in Naples had pastry cream but were otherwise just like yours. In the US, I've seen them with ice cream. The US can ruin anything
Actually in France they sometimes have them with ice cream and chocolste sauce.
