    Like pata hamonado, Pata Tim is a whole pork leg cooked low and slow in a sweet and savory sauce. But while pineapple juice is the base ingredient for the former, Shaoxing wine and star anise are the flavor components of the later.
    The whole pork leg is first seared to seal in flavor and then simmered in a soy sauce mixture until melt-in-your-mouth tender. A couple of hours on the stove with minimal tending and you get succulent meat and an amazing sauce. But Im too impatient waiting a long hours of slow cooking thats why I use my Instant Pot to cook this amazing dish, thru pressure cooking.
    Cooking tips
    Pat the pork well with paper towels so it will brown nicely when seared. You can use fresh or dried shitake mushrooms in this recipe; if using dried variety, soak in warm water for about 20 to 30 minutes until softened and then using hands, squeeze the mushrooms to rid of the liquid. At para maalis din yung panghi ng mushroom😅
    The recipe calls for bok choy, but other leafy vegetables such as spinach, pechay and napa cabbage are also great options.
    Ingredients
    for the brine:
    4 cups of water
    1-2 pcs star anise
    1/4 cup salt
    -4 pounds whole pork leg
    -3 tablespoons oil
    -3 cups water
    -peppercorns
    -1 head garlic & 1 onion
    -1/4cup cup soy sauce
    1/4 to 1/2 cup sugar depending on how sweet you like
    -2 pieces star anise
    -shitake mushrooms
    -1 bundle bok choy
    -2 tablespoons corn starch diluted in 1/4 cup water
    drizzle of sesame oil optional
    Question:
    I have no pressure cooker, what do I do?
    A:
    follow same recipe, but instead of pressure cooking for 45 mins, just simmer the pork Pata for 2 hours in low heat. (gradually add water because it will evaporate in 2 hours time)
