    Here's a simple recipe for making San Sebastian Cheesecake, also known as Spanish or Basque Cheesecake, known for its fluffy texture, delicate inside, and slightly burnt top.
    Ingredients:
    900 g cream cheese (room temperature)
    250 g sugar
    5 large eggs
    200 ml heavy cream (33-35% fat content)
    1 tablespoon flour
    1 teaspoon vanilla extract (optional)
    Instructions:
    Preheat and prepare the pan:
    Preheat the oven to 220°C (428°F).
    Wrap the bottom of a springform pan (preferably) with foil to prevent leakage. Grease the pan with butter.
    Mixing ingredients:
    In a large bowl, beat the cream cheese until smooth.
    Gradually add the sugar while continuing to beat.
    Add the eggs one at a time, beating well after each addition.
    Pour in the heavy cream, add the flour and vanilla extract. Mix everything until smooth and well combined.
    Baking:
    Pour the mixture into the prepared pan.
    Bake in the preheated oven at 220°C (428°F) for about 25-30 minutes, or until the top is golden and slightly charred.
    The cheesecake should still be a bit wobbly in the center; do not overbake.
    Cooling and serving:
    Let the cheesecake cool in the pan at room temperature, then refrigerate for at least 4 hours, overnight is better.
    Before serving, carefully remove the sides of the pan. Serve as is or with a berry sauce/fresh berries for an extra flavor.
