Greetings from Ireland! Most of the traditional fish and chip shops here (chippers) would use a similar batter to what you're using ie no beer... it's mostly pubs and restaurants who use beer batter... Haddock and whiting are other fish that are also battered here and, from what I hear, pollock is used in a lot of places because it's more cost effective ahem 😉 PS love your videos man keep up the amazing work 😊😊

Hello from UK. Love your channel. best fish and chips in UK are fried in beef dripping. Salt, malt vinegar and ketchup thats it. Batter is just self raising and ice cold water and use straight away. Haddock i agree. Nice thick piece is hard to come by, but is worth seeking out. Sprinkle the batter bits (scraps) left in the pan all over the chips.

In the UK you often get Pollock in recent years but Cod is making a comeback. In West coast Canada they often use Halibut which is great for fish and chips. If you get to the right spots in Scotland you can pretty much choose whatever fresh fish you want off the menu

I’m watching your wonderful videos from England. Fish and Chips is almost the national dish … but we can’t make it over here. Everyone sells pale, soft chips and flavourless, stodgy batter on flavourless fish. Your recipe makes my mouth water … and I’m recovering from Covid! That’s how good your videos are! I love your presentations style. Your vids are short and to the point. Whoever films these, should get an award. Brilliant filming. You are my favourite chef right now. Thank you for sharing your experience!

Haddock is still hugely popular up here in NY and probably rest of the northeast surprised you can't find any.

Just use carbonated water like Perrier or Pellegrino. Beer is just bread in a glass anyway. CO2 is really all you're after. I used it last week with a store bought batter mix and it was bangin. Btw breaded or battered salmon is amazing.
