Made these with more condensed milk and 35g of butter, came out really good, and actually good for long tins too. Only thing I would add is to oil the pan with oil or butter before placing the dough as mine stuck even when it’s non stick. Also waited longer for the proofing time and it seems better for me not to use a cling wrap, would suggest to look at the size of the dough to gauge. The last proofing stage is crucial to wait for it to raise up to a good height. Also would suggest to use the bottom rack as my tops browned quite early or place a foil over the top after 10mins or so of baking when you think it’s brown enough already.

The next time I will let them rise for 1 1/2 hours. I did not have whole milk to brush them with before baking, so I used heavy whipping cream.

Apron,请问你用厨师机揉出手套膜需时多久,为何我跟足你的配方和步骤做,机揉了20多分钟还是没出膜呢?不要说出膜了,连面筋都没形成,拿起面团一扯就断呢!是不是在放黄油前先把面团拿出来醒个20来分钟,再放黄油机揉会比较容易出膜呢?或者用水合法放冰箱冷藏几个小时会比较容易出膜呢?盼复!!!

@@Apronyoutube 我今天又试了一下,厨师机揉了差不多40分钟,最后都出黑油了,我赶紧结束揉面,但……还是没看到传说中的手套膜,面筋几乎都没怎么形成,我查了些资料,要想揉出手套膜,配方的含水量必须要在65%以上,您这个含水量很少啊,是不是揉不出手套膜跟这个有关系呢?另外,我这边的室温比较高,大约有28-30度,不知道这个有没有影响呢?另外,我发现刚开始的时候,还有部分面团在K字桨上,越到后面,K字桨上的面团就越少,到后面我一停机,K字桨上完全没有面团了,全到盆底了。
