This is common in old movies that sometimes the audio sounds good and like it was made today and other times it sounds like vintage audio and it is the good part is that this line was restored correctly

Nothing was restored. Only thing changed was the time was slightly lengthened till Roy says the line. Because the audience response and chatter was so huge.

I heard Spielberg intentionally had an extended time between Bruce (The Shark) appearing out of the water and that famous catchphrase so that the audience will have a chance to calm down after the shark appeared
