Im 19 and I have autism, carbonara is the only meal I can make by myself at the moment (although I am supervised for safety ressons) and I was really proud of myself how it would come out until I saw this. I'm glad Josh doesn't supervise me, he'd probably make me do it all from scratch.

Then I dated a guy who still lived at home in his early 20's (which that alone wasn't an issue in and of itself as I didn't move out until 27) and his mom cooked everything for him, PLUS he was super picky about not eating any vegetables (learned to debunk that when he ate a rotel dip I made, which had tomatoes, though smothered in cheese and ground beef), and well...I knew then that things weren't going to last between us, lol. It's now a dealbreaker for me if a guy says he doesn't cook whatsoever as I actually don't like cooking but I cook because I do like to eat and it's way cheaper than constantly ordering Doordash. I usually piggyback off of processed things to make a meal, so I'm not the greatest cook myself (like last night, I combined beef Ricaroni, ground beef, smoked sausage, canned stewed tomatoes, and steamed broccoli to make what I call "One-shot Pot", lol. I switch the vegetables up based on what I have available and sometimes add a can of beans). But I can at least form a functional meal. He and his sister learned how to make a basic Béchamel sauce to turn into a cheese sauce for homemade mac and cheese when they were teenagers. I created mac and cheese monsters who would make it for a snack! We also went through a lot of milk and cheese. But they can both cook it from scratch and he can also now make homemade scalloped potatoes with ham. He’s pretty good with the grill too. He’s also the family caramel maker. At least twice, he made caramels after school in order to give gift bags of them to his teachers for Christmas. He really hasn’t been dating, but when he does move out, either alone or with roommates, at least I know he will be able to feed himself properly without living on Hot Pockets. He might even teach them that homemade chicken fingers are actually easy to make.
The adding 10 minutes is so funny to me, it’s like her total time was just 10 minutes longer haha. i thought it would be a pause on cooking for her, where she could gather things she needed, outlined her next steps, etc. Love how these little challenges turn into a game of sorts. And so happy for you both and your future together:)

As an italian that loves carbonara and that is usually skeptical about how other countries cook pasta, I have to say that I am impressed. A part from the garlic addition, which is imho not necessary (and not recommended by the original recipe, since the carbonara already has a strong flavour), Josh's recipe is on point (I hope the cheese is pecorino romano tough). Bravo! This is one of the most changed recipies, I have seen orrible things on youtube about carbonara, for example cooking the eggs, having cream added to it, putting whole eggs, using parsley, etc but this is very nice and very well done. I'm so happy about this. Love the channel!
Eh, we all have our own way. I learned how to make it from our neighbors when we lived in Pozzuoli a long time ago and they added parsley and used whole eggs. I still make mine with those, but I've not used garlic before. I might try it because it sounds good. And I use parmigiano reggiano and not pecorino romano because I don't like sheep's milk cheese.

Totally agree, but using fresh pasta is the wrong choice in my opinion. Carbonara highly profits off of al'dente pasta, which can only be achieved with dried semolina pasta.
I just clicked that lank and bought the KitchenAid Pasta Attachment. An attachment I convinced myself I didn't actually need for while I neglected to actually use the hand-crank pasta maker I've had for years because it was difficult to use. Congrats on all the hard work making great videos. I'm a big fan.

Actually the traditional recipe includes whole eggs as they didnt wanna waste any whites. Its much tastier with yolks tho and def without garlic.
