Their ages do keep going up steadily. Every chapter/episode says how long it's been since the death of Himmel. It was 27 years when Fern and Frieren started the journey. Fern was 16 at the time. Stark is 1 year older than Fern.

Basically there's a few years of Fern and Frieren traveling together before their quest for Heaven starts that the story mostly skips over. Regarding specifics, in the chapter after Heiter's death, some time after they started traveling, it is stated to be 26 years after Himmel's death. A chapter later its been 27 years, Fern thinks to herself she's been traveling with Frieren "for a long time" and Fern has her 16th birthday.
