Traditional Amish Friendship Bread | Cinnamon & Sugar Delight!

- I recently made some Amish Friendship Bread starter ( video here • Amish Friendship Bread... ). Today we're going to use some of the starter to make a traditional loaf of Amish Friendship bread. It's probably one of the moist desert breads you'll ever have, and is topped with a wonderful layer of cinnamon and sugar. If you haven't made a starter yet, get some going and play along with me. I have many more video planned for this coming winter, to share all the ways you can use this with you.
Recipe:
1 cup Amish Friendship Bread Starter
3 eggs
1 cup oil
½ cup milk
1 cup sugar
½ teaspoon vanilla
2 teaspoons cinnamon
1½ teaspoon baking powder
½ teaspoon salt
½ teaspoon baking soda
2 cups flour
1 box vanilla instant pudding
Bake 1 hour @ 325° F
Notes: Use 1 or 2 boxes of pudding (pudding boosts flavor and moisture, but you can also leave it out or make your own). Add 1 cup of dried fruit, nuts or baking chips of your choice. Looking to make your Amish Friendship Bread healthier? Swap out ½ cup oil plus ½ cup applesauce or 1 egg plus ¼ cup mashed banana. Reduce sugar to ⅔ cup or replace with ⅔ cup honey.

Right before you realized you had left out the Amish starter, I was literally yelling at the screen, “wait! Don’t you have to add the friendship starter?” Lol. It looks delicious! Can’t wait to try some at our house- I haven’t made it in a VERY long time!

I'm om day 5....can't wait to surprise my best friend and her hubby for Christmas. When I was newly divorced, with a sick kid, and 2 jobs I couldn't afford much. This was my present to them. He has asked for it for the past few years. Now I get to surprise them with some cinn bread! ❤️
This bread is wonderful. You can use different puddings for different flavors. Such as chocolate, lemon or not adding the cinnamon and add baby chocolate chips. Enjoy!!
I’ve been running a friendship bread starter going for a few weeks now and even taught a homeschool class how to start their own last Friday afternoon. This was a nice video, I love friendship bread! We made waffles with some of our extra and they were delish.
This was THE best bread ever. I remember it very well!
I love using different flavors of instant puddings. Pistachio was our fav with extra ground pistachio added.
Looks delicious. I have a lot of sourdough experience but very little Amish friendship starter experience. The reason you don't want to overwork sourdough is that the gluten structure breaks down after a point, causing it to release the absorbed moisture, and the dough will become loose and sticky. Once that gluten breaks down, there is no saving the dough. It will be a sad, soggy mess, and the dough won't be able to hold onto its fermentation gasses.
Okay....now you have me hooked! Our oldest is 40 (then 18 year gap lol) and youngest just turned 15 today! I made this till we had enough...no one said I could freeze it. Gave it away to family and friends until I ran out of people to give it to...lol! Now watching you is like deja vu! We were gifted a very sweet cinnamon pound cake from Costco and they want more (4 kids are still at home farming with us). This might come close if I remember right😉 Are you going to post videos of your other creations? Working on the farm with 5 hours of sleep my creativity is low until you show ideas and I run with them. I like your recipes so I have a starting point. Butchering my last 8 Cornish cross tomorrow to can broth, chicken soup, and chicken hunky and freeze the breasts. Usually 7 qt. of each. And then put my canner away for the winter...unless I run out of beans😜 I'm so ready for the kitchen to not look like a processing plant. I did the whole garden, 50 meat birds, 4 pigs....still have ducks, turkeys, 1 beefer. We do all the cutting, grinding, and wrapping up ourselves. So enough is enough....time to get ready for holiday fun!!

My Amish starter is on day 4. But I have finally had success making a traditional sour dough starter, it's taken over 4 tries. Tonight I am making a dear departed friend's sourdough multigrain herb bread recipe.
I replace to oil with either pear or apple sauce. Add dried fruit, chocolate chips.
Pie crusts made in advance is such a good idea. ❤

The reason you don't over mix is because that develops gluten, which would make your cakes and quick breads, such as friendship bread, tough instead of tender.
Yes, and it also leads to tunnels through the crumb so the texture is off

As you said it was time to put the batter into the pans-I thought to myself that I wasn’t paying attention-I missed the addition of the starter. 🤣. I’ve left out ingredients many and realized after 5he product was in the oven and I was cleaning the kitchen! No one’s perfect! 🌹

First time commenter here...I used to make this long ago. A starter was given to me from my aunt and not one of us knew how to make it. After months of keeping a constant supply life happened and I lost it. (Very sad day) We are actually buying a few acres and I have been watching you for months. I was saying to my phone “ you forgot the starter”!! Glad you caught it!! 😂
As a teacher (in the 1990s) ziplock bags of this starter was often up for grabs in the teacher’s lounge. I took a bag home and kept it going for a long while, but only made the bread. That long ago recipe indicated using different pudding flavors. A favorite was pistachio! Lemon was also good. My neighbors loved it when I shared!

You can change up the pudding flavors to get different flavors. I use 2 boxes and my favorite is 1 box of vanilla and 1 box of banana. I also add golden raisins. It is delicious!

This was so good. I didn’t do the sweet starter. I already have a sourdough starter that I’ve had for years, and maintaining 2 does NOT sound fun, so I used a cup of it. The bread turned out amazing! I’m definitely keeping this recipe in rotation. Thank you.

Yay! I've been waiting for this. I am on day 2 so I should be on ten next weekend in time to make some yummy stuff.
The beaters were the best. It was at my grandma's house, but the same sentiment.
I did this over 30 yrs ago :) Back then, I didn't know you could use the starter for anything but bread :P (love the internet ha) Our favorite was making lemon poppy with the starter. It got to be way too much sweetbreads for the kids: I wasn't making any other kind of dessert because I needed to use up the starter! We missed cookies and pies and bars etc. Now I know better.

Hi Rachel, I am the one that ask you about my starter not being bubbly. You ask me if my yeast was out of date, which it was by one month. I had other yeast so I added it to the one I already started and it did get real bubbly. Today is day 10. I’m going to make the bread and crossing my fingers it worked. 😄 if not I already have another started.

I haven’t made Amish friendship bread in about 20 years too. Now you have inspired me to start one myself. I’ve tried my hand at regular sourdough and it’s just too fussy and time consuming for me.

As I was watching, I was saying”Oh no! Rachel, add the starter!” Then I thought you probably added it off camera. Lol. I have made this bread, omitting the cinnamon and adding chocolate chips or blueberries and then just sprinkling sugar on top. DELICIOUS!!

I meant to but haven't yet. I've been baking pumpkins and pureeing them for future pies, breads etc. Plan to dehydrate some, and grate some (to freeze)

I sure did get it started!!! I have my gluten free one going & my regular one!!! Unfortunately instant pudding for me is a no go. Hmmm now to figure that one out. I am on D-3 & D2 on starters.
you can just omit it , it's pretty common to just leave it out

6:00 The reason to not overmix a dough or cake batter: this runs the risk of too much gluten development, which can result in a tough or chewy bread or cake. Think the differences between a chewy baguette or ciabatta, a firm but spongy sandwich bread, and a fluffy cake. That’s the high, medium and low gluten development.
This is fun because I am on day 5 of the starter. I am excited to see what we are going to be making! I can't quit thinking about your flour jars! I love the size. Where did you get those beauties?

Yes save back a cup on Day 10 after day 10 feeding and that's your new day 1
What is the ratio of cinnamon to sugar? It looks nice and dark. Is it a darker sugar?
How do you store the leftover friendship batter?
What type of sugar are you using? I doubt it is brown sugar but it has a brown color?
