Also, the Japanese mostly spend an ungodly amount of time trimming and cleaning the icky parts like coagulated blood, rancid blubber and remains of bone and cartilage, off the legs. I know you just hacked it into pieces like they do in most places, but in Japan they really spend time on it to make sure there are no off-flavours or bad textures. I often watch Japanese cooking channels and some really spend like 10min of the video just on meat prep. As a life long leg fan, this has been a game changer, even my wife now like leg meat...

Using straight cornstarch will make the skin cook faster and the chicken inside remain raw
That's why we usually fry them twice. Once at low temperature, rest the meat, and then we fry them again at high temperature for crispiness.

@@vinegarfreakno real karate is put in the oven on a wire rack low and slow after flash frying🙌 that sets the outside with a nice crust but it traps the flavor, it also lets the oil drip off to make it lighter and you get time to prepare the rest of your meal. Also take the skin off, no respectable Japanese chefs serve the skin on. It provides no flavor and will stay chewy unless you fry the living shit outta the whole thing. It hurts to toss it but trust me. Take it off before you marinate the chicken and it’s game changing. The oil provides enough fat and the marinade provides enough flavor.

Flash fry with just cornstarch (just a tiny bit of cornstarch and don’t let it get damp on the chicken or Itll fuck up the texture. Litterally plop the marinated chicken into the cornstarch each side for a second and immediately into the oil). Less is really more, try experimenting with your next batch. I promise you on my life

Healthier is a subjective term when used with chicken breast vs thigh. The breast typically has higher protein and less far. But the thighs have more vitamins and minerals. I prefer thigh just for the flavor

Fun fact, marinating and/or cooking with ginger or ginger paste is what pulls out that strong gamey/couchy taste from chicken, lamb, duck, veal, beef, liver, and venison.

This is why i love Safeway fried chicken. They usually have an 8 piece dark fried chicken and the skin might be the best. You can get it grilled as well, but then they take the skin off. Crazy good, especially for only $6
