This was GREAT!!! But it took a lot of work to prepare and the mussel broth was a thin (I should have used less water when steaming them). Otherwise, great!
The alcool evaporates once you've cooked the mussels. If that wasn't the reason for your question then replace the wine with two soup spoons of... fish soup (I've never done it like that, but I believe it might do the job for you).
For acidity of the wine and clear conscience I would add lemon juice. Maybe with lemon zest if you like the flavor. I am trying this recipe for first time :)
We always soak clams which cannot close their shells as tightly and are more prone to have lots of sand in their shells. In our experience, filtering the broth after the mussels are cooked are enough to remove any sand they purged during cooking. When clams are involved, we do a 2 hour soak in salt water first.

Great recipe ! Very simple and super tasty. I added a little corn starch to thicken up the sauce a tiny bit! It was so good
And I added shrimp and scallops

I think it is better to put them in hot water first to kill them immediately.
But this takes away the flavour

Why did you not remove the sand from the mussels 1st?. you are soaking them in a salt/baking soda solution. They will spit out the sand.
