We call avocado, Zabouka or Pear. Was told mauby provided cooling properties for the heat. It’s bitter and sweet, acquired taste. Mark left with a trini accent 🤣

@@mikiva-z4qThat unfortunately sounds like a “you” problem. Avocado is fully named avocado pear or alligator pear. Zabouka originated from the black population who came from the neighboring French colonial islands. Trinidad was essentially an empty Spanish outpost for South America and the French needed somewhere to hide from the British. The term 40 acres and a mule from America was 32 or 16 in Trinidad. A Grenadian, Phillipe de Saint Laurent did the work and the Spanish took all credit. The guy was so good toussaint l’ouverture wanted to hire him, the beef became his whiteness lol
You should try the callaloo dish, he did everything step by step for you. It's easy. You can have it with rice and any stewed meat. You can even do a little potato salad on the side.
The red liquid he used in the recipe is roucou (better known as Achiote in the USA), you'll find it in a lot of Latin markets as Latin Americans use it a lot in their cuisine.

I was in Sierra Leone one time and was a very surprised Trini when I was given callaloo exactly the way we make it in Trinidad except they made it with cassava leaves.

Mauby is too "black licorice" for me. I'm Trini, but 1st generation USA. Definitely an acquired taste.

You need to try

cow heel is pressure cooked for tenderness, callaloo ingredients chop small because you swizzle it to desired texture not blend
