A message from Japanese guy who loves karaage: you can boost your karaage up with sauces below: (1) Tartar: Mix crashed boiled egg, chopped onions, sweet vinegar and mayo (2) Oroshi ponzu: Mix grated daikon and ponzu(citrus juice and soy sauce) Cheers!
Chicken Karage Recipe Ingredients 1 chicken, deboned and cut into chunks ¼ cup potato starch ¼ cup AP flour 2 tbsp light soy sauce ½ tsp kosher salt black pepper 2 tbsp sake or mirin pinch of salt to season once the chicken is out of the oil Oil to fry Japanese mayonnaise and lemon for garnish. 1. Marinate the chicken with soy sauce, salt, black pepper, sake. 2. Prepare a heavy duty dutch oven to try the karage. Heat oil on medium high until 170C. 3. Add AP flour and potato starch to the chicken. Massage the chicken so there are no dry spots. 4. Gently drop the coated chicken into the oil. 5. Fry for 4-5 minutes, depending on the size of your chicken until golden brown. 6. Take out on a wired rack. 7. Crank the heat to high, or until the oil is at 180C. 8. Drop the once fried chicken into the hot oil. 9. Fry for 1 minute or less, and take out once golden brown. 10. Season with salt. Serve with Japanese mayonnaise and lemon. Enjoy!

i love this kind of video, I can totally relate. I used to work at restaurants in the US before coming to Korea and would get home at 2am with no dinner sometimes. I would always tell myself "okay just make something quick and go to bed" but I would always end up going all out. It hits different after a long day and then finally eating after an hour of cooking after work. uwu

A tip you may or may not use: Use a wok to deep fry. You get more surface area with less oil, and the tall walls of the wok help reduce oil splatter. easier clean up. learnt this from my grandma a few years ago.

Trust me when I tell you that your self talk is very important, and whether you talk good or bad to yourself, your subconscious takes it and runs with it at face value, so always try to talk yourself up no matter the situation
oh my, love that beer, and love karaage, yes double frying is worth it for the extra crunch. I try to get chicken thighs with skin on, the crispy skin ups it a notch. also like adding finely chopped garlic and ginger with the marinade, but it's extra effort, gonna try this simpler way. Only thing i would have sprinkled chili powder on the mayo 😋🍻
I’m Japanese and I think almost every family has different karaage recipe but your recipe is basically same as my mom’s one. My mom only uses potato starch tho the karaage looks so juicy and crispyyyy🥺
