Marrow in every way is very bad for you. I wouldn't use it as a bread spread. I've made umami broth out of it and even then, you still have to skim off the fat that renders on top of the broth. And even then, the broth is bland. But that's fresh broth and it only takes less than an hour for an entire vat meaning the mixing device is like an oar for a boat. Marrow in this grilled way can enhance meat dishes or sauces incredibly well but it's not for pure bread spread usage.
