That's great and what I love most about making my own. Make a batch, tweak it, make another batch, tweak it again. Don't know if I'll ever perfect it but it's great fun and I get great food while I do it. 😀

This will be my third time making a version of your recipe. This time with more mature garden cucumbers so the cucumbers have been peeled and seeded salted and placed in the fridge. Tomorrow I will complete the recipe. When you make another batch of relish would you weigh your cucumbers so when I'm using odd shaped cucumbers the recipe stays the same. Your excellent recipe. It's going to be while before I make another batch, what with testing, retesting, dry runs and the actually filming I have so much of it the cupboard, enough to last me a year easily. I did however weigh the cucumbers when I was down the shops yesterday. The ones I use for this recipe are about 450g each before de-seeding. So anywhere between 800g to 1kg of whole cucumbers for all the other ingredients will work fine. I hope that helps a little
Hi, glad you liked the video. Tapioca starch could definitely be used instead. I've not tested it myself so probably best to add a bit at a time until you get the desired thickness. If you do it I'd love to know how much you end up using.
Thrilled to see you had a cucumber relish! I have picked about 9 cukes from the garden and needed a way to preserve them! Once in sterile jars do you leave them in the fridge or can they be popped on pantry shelf? 🙃🌱
That would be a few too many to eat at once 😄. If sterilised and they have made a good seal then they are fine in a pantry. I kept the one I made for this video for a year in a cupboard before opening and it was lovely. Just keep in the fridge after you've opened it
That's a hard one as I've never used anything else but understand that the dill flavour is not everyone's cup of tea. I'd go with chives as it adds in the freshness, would definitely work and will add a subtle onion flavour
