    The belly fillet is the best section of a salmon. This seems to have been overlooked.

    At 1:40 she says she takes the knife "right on top of the tail bone" as she makes a cut just behind where she cut off the head.

      Even though this fish was raised in a hatchery it still lives a life of its own in the wild. It doesn’t live inside a fish pen like a lot of fish before getting killed to be sold. I think that’s what she meant by wild

    And then the local market giggles as they sell this previously frozen wild King Salmon as "fresh".

      Any fish you buy at a market that is sold as fresh has been frozen. Legally fish must be frozen to be sold.

    It is never filleted because you leave the bones on the fillet. Bad filler

      When you buy whole fillets or large sections of salmon they almost always have pin bones remaining.

    Every salmon cleaning video I watch every cuts the fins off cuts the head off and guts it just to take the meat of skip all that crap and just take the meat off for crying out loud

      Because they sell the head, every fin but the pectoral and the backbone. If you cut a hundred salmon and took all the meat from the backbone with a spoon after filleting you’d end up with pounds of pure flesh. Multiply that by another 1000 and you’ve got a shit ton of money from backbones alone. Places that sell wholesale like this don’t just throw money in the garbage. Notice she cut the belly and collar in half to portion for packaging also.

    Omg. Ur fillet technique too hard.. I am a wholesale fish cutter in Hawaii king salmon should be easy u struggle on it.
