    Just cooked this today for the xmas table. Flavoured half of it with peppermint essense, and the other half with rose water. So delicious. Turned out perfect.

    Thank you Georgia for this wonderful recipe. I made it last night for the very first time and it came out beautiful. I didn't have a scale to weigh eggs and sugar. So I used two egg whites and half cup of sugar. Since we don't get castor sugar easily in the US, I pulsed granulated sugar in the food processor and not too fine. Baked mine for hour and 15 mins at 200 degrees. Came out looking shiny and striped in colors and no cracks either!!!! I am so thrilled, thank you!!!

      I was going to ask about the sugar too, since I'm in the U.S. i guess granulated will have to do. Also, if i want to color the whole thing, can i add gel color before i start whisking them?

    Same as someone below. My meringue didn't bulk up after putting it over the hot bath. So I just did the traditional way of beating the eggs first then adding the sugar. They did turn out beautiful in the end!

      Jena Ross are you in the UK or US? I'm not sure what temp to use since my oven is in Fahrenheit and when I google it it says 212? Your help would be great ty!

    I've been sick of every time I try meringue recipe's they never turn out as they should UNTIL NOW!! This recipe works perfect for me I even made mini toffee pavalova's with it as I'm a toffee/caramel addict they we're lovely so I'll b defo trying some of your other recipe's love u lots ur a sweet girl xx

    They look superb. One question pls. My oven has minimum temp as 150°C. Can I bake at 150 and maybe for lesser time like 30 mins. Pls advise. I would love to try out your video.

    Thank you Georgia four this recipe. The Came out perfect if left theme Longer in the oven About 3 houres tot make sure they wil last a week.
    There is just i little crack in them but it don't botter me

    Georgia, I tried to make these today but couldn’t get the meringue mixture stiff enough,I even used a little lemon juice on paper towel to clean my mixer and whisk so there were no traces of oil. I wondered if once I’d mixed the whites with the sugar over hot water, should I have let it go cold again before whisking? Can you help please

    Georgia I may have watched this a “few” times 😅 here in the states we go crazy for pumpkins in the fall. I was thinking of making these in the shape of pumpkins to top cupcakes.       You could try letting them cool down in the oven instead of bringing them out straight away, it is known that the shock of the room temperature to the oven can cause meringues to crack x

    Hello Georgia! i'm new to your channel/baking and absolutely love your videos. You make everything look so easy i can't wait to try them all. I intend to try making these meringue kisses for a friend's birthday this weekend and will share pics if i'm successful lol. Can i use any kind of egg whites? i mean can i use the pure egg white in the carton or does it have to be whites separated from the yolk? thanks

      Fresh egg whites usually work better but I believe the carton egg white do the trick :)

    Hi, Georgia. This is first time I tried the Swiss meringue method, I tried french and it was unsuccessful. I follow your recipe and method to the T, but I had to bake for about 4 hours because my oven is not hot enough??? Also, my meringue kisses look matte on the outside and not shiny and glossy like yours. Please advice what I could do to make them shiny?

      Every oven work differently - I would advise getting an oven thermometer to make sure it's 100°C

    Ok so mine did not whip up. Everything was clean being aware of meringue fails. I even put a little cream of tartar. But I think it might have been because I used pasteurised egg whites. 🤷🏻‍♀️

    Hi Georgia, please how long did you whisk the meringue for? My kisses don't hold their shape as well as yours and I think it's because despite whisking for longer than I normally would, my meringue wasn't as tough as yours. Thanks!

    Once the sugar has melted, do you need to wait for the egg and sugar to cool before you mix it?

      Yes, but you'd have to use an oil-based colour also known as "chocolate" colourings :)

    If the lowest temp I can get is 215 farenhite how long do I need to cook the meringue kisses

    i made this 3 times and follow every direction, i bake in 100°C in 45minutes but still soft and stick to the parchment paper. then i bake until 120minutes. its crispy, i like it but the color turn light brown. then when i cooling it on cooling rack, just only 3-5minutes, the peak of meringue so sticky. what happen with my meringue? can you help me? Thankyou

      Ratu sp its hard to say... But you might want to check if your oven is actually at the temperature you set it at.
      Also, make sure your sugar is added in and completely dissolved in the whipped egg whites, else it will cause beading, where the tiny sugar crystals exist on the meringue cookies after being baked, which can cause the stickiness when it is humid. Look up on some online resources, maybe they can help

      Granulated works but takes longer to melt and runs the risk of the sugar melting in the oven causing cracks..
