Millet or sorghum mixed with either dried cassava or little maize is the best ugali flour, very nutritious and healthy.
The omena came out yummy, this also another healthy meal, especially the soup for kids builds their immunity.

In Zambia,Ugali is called Nshima or nsima.
We also have grounded sorghum or millet. We also have mealie meal and you can mix it with cassava meal.Its very delicious delicious.
We don't cook ugali like that in Zambia. We wait for the water to get hot but not boiling, we put enough mealie meal just to make thick porridge. We cover the porridge for 10-15 minutes. After that we start putting mealie meal bit by bit mixing until a required texture is attained. We don't make it hard like that. We cover it for another 10-minutes to make sure it's cooked thoroughly then we mix again then we use a spatula like spoon to dish on a platter in small balls. Then when we eat, each person gets a portion if not full one can always get more nshima.

You can even cook it in peanut butter sauce.
