    This was so cute….. I can identify with Tom. I’m a Westerner, my husband is Ghanaian. I went to visit his Sister in the States….She threw me a small welcome party, and decided to make Fufu and a stew. Wanting to be helpful, I went about “ setting the table” with knife and fork of course…..Everyone had a good laugh as my sister in law explained…….”You don’t eat Fufu with knife and fork”!! Married almost fifty years, we now travel to West Africa regularly for our Missions Ministry. I still eat my African dishes with cutlery

    In Uganda, omena is called mukene. I love how you've prepared it. For me after preparing it the way you've done, I add a little soup.

    When a luo person is preparing omena I just sit and relax because they are the experts...they prepare the tastiest omena. Tom is lucky to get it prepared by an expert🤪🤪

    Thats nice, we call it kapenta( oontangu) here in Namibia 🇳🇦 the ugali we call it (pap) we prepare it with maize 🌽flour or millet ( mahangu flour).. that was a top notch dish.

      Pap from mahangu is taste.
      Reminds me of me stay in Northern Nam. My NAM sister from another mum used to hv it made for us. Her family in Omusheshe made it for us too.

    Omena is my all time favorite delicacy despite being from kisii.My mum learnt how to make it from our Luo neighbors and I learnt from her😋😋

    We cook like that here in Philippines,in my home town we are living near the sea and river that kind of fish we called "Dilis" so tasty when it fries,row tomato and onion is good when we mixed on it😊

      Nice one, Joy!🙂. Lovely meal. We, too in Nigeria hv the small fishes. We fry dem and eat dem alone or make some stew with it. Tasty fishes!😄.
      For your Maiza flour, we have wat we call Garri" . Its made from cassava and we make "Eba" with it. We prepare it the way u prepare ur Maize flour. We also hv other "swallows" - ie, (ur Maize flour. )Dats d way we call here in Nigeria. These "swallows" can be eaten with any kind of soup. Taste yummy - yummy !!😋.
      Well, we can understand Tom...not too worry. Just like Joy said, when u make this type of meal, it's beta to use ur Hands. Dat way, u enjoy it beta. Well done guys!! 👍

    In Zimbabwe, Ugali is called "sadza" and the small fish is called "kapenta or matemba".

    We cook like that in Barbados, but using the yellow maize meal with okras. Our fish is dried codfish (salt fish) We call it cou-cou .

    Hi Joy. I am a coastal lady from Mombasa. I normally soak my omena with warm water for five minutes. Then proceed to wash it with warm water until it looks silver-like in colour. On the last step of washing I usually use cold or room-temperature-water, then strain the water.
    2. Pan dry the omena on medium heat.
    3. Shallow fry the omenas until they are almost brown, then I add sliced onions, freshly crashed (in pestle and mortar) ginger and garlic and a pinch of salt until the omena are golden brown and crispy.
    4. I prepare tomato stew full of spices and herbs as per my preference.
    5. Serve with soft warm- hot sima (ugali).
    In other words, I do not cook omena and tomato stew in one pan. I feel like tomatoes and other spices weaken the aroma of crispy fried omena. (My opinion and observation).

    Oh! that was awesome, here in Zambia we call it Kapenta and its prepared the same way except for the ugali us we use first luke warm water hot enough but not hot to make those balls meal meal is added like its porridge then when the porridge boils thats when we add more meal meal thick enough as you've done good nsima as we call it here is not supposed to stick in your hands we also cover it even several times then its done. That was perfect cooking.

    In Tanzania Omena is called dagaa. Most people prepare omena in the same way. But others add coconut cream or peanut butter. We have different types of omena

    I'm Zambian. Omena is called Kapenta here and Ugali is called nshima. I cook the silver fish just like you but for the nshima i start by warming water add flour to make it a soft porridge then let it boil then add more flour to the texture of choice. Its a lovely meal.

    In Zim we cook Mathemba/Kapenta (Omena) the same way or we soak Mathemba in water for 5 mins and fry onion, tomato mixed with spices then you add mathemba and simmer for 5-7 mins. Or just fry in soup until its brown and add any coating. For Sadza (Ugali) we boil water then mix cold water and mealie meal (maize flour) aside just a little and add to the boiling water and stir until its like porridge then leave it cooking for some minutes then add mealie meal as required but don't make it hard. serve as you want.

      Yes even here in the Caribbean we prepare it like this but we call it turn cornmeal the Siler fish is a bit bigger here we dry fry it and add onion and vinegar and Scotch bonnet peppers the more I watch these volg the more I see similarities with our food 🇯🇲🇯🇲🇯🇲

    I do fish like that but we preserved it with salt in Trinidad and Tobago we called it corned fish but it's prepared and cooked the same way. We do the bigger fish but we cut it up in small pieces and cook the same way

    Am from south Africa 🇿🇦 I always see this fish from people from Zimbabwe, Malawi and also Nigeria they love it . I don't like the smell but the way you cooked it , I think am going to try your recipe... Teach Tom more African things as you learn the western ways and their food. Pass the knowledge to Anabelca so that she knows her African heritage.

    I love omena 😋🤤 I almost licked the screen 🥺🥺
    I first wash it (omena) with hot water then deep fry it in some little oil . Then heat my pan , fry my onions afterwards put my tomatoes (some salt) and lastly put my omena . The last part I add some milk 😋😋 Joy you should try to add some fresh milk I'm sure you loves will love it (. That's if you take milk 🤤)

    Omena in zambia we call Kapenta! My faaav! I am drooling!
    I actually enjoy it natural(no spices)but just perfectly fried. The technique in frying it well does it for me. Looks soo delicious
    Largely people here only add onion & tomato, Some adventurous eaters add shreded cabbage to the pan midway through, a delicacy. And others add beaten egg another delicacy.. It's also good with potato cubes fried together

    In Zambia it's called kapenta we wash in hot oil drain then fry add onion then tomatoes or green paper to take out this smiles then add fresh green chilly or red caps corn and carry then fry till golden brown can put a led on to get abit of gravy

    I'm from Kenya, but my community don't partake of the "omena" so I have never tasted it, we eat mostly Millet ugali.
    You made it look mouthwatering and now I have to look for where to buy this fish in Texas.

    Hi Joy and Tom, thank you for sharing. @Joy, I am Nigerian and we make some of our swallow just the way you made your ugali though there are different techniques to making it. Amala, poundo yam/potato, semovita, oat swallow, are made the way you made your ugali. Though garri is mostly made without putting it on the stove top. You just stir your garri in very hot boiled water.

    Oh I love this.the omena we call it matemba in my country. I also fry them like that as well . And Sometimes I soak it in water before cooking to make it a bit soft . Otherwise its really nice.

    Tom has really enjoyed. As for Me after frying the silver fish like you have done i add some water for soup and sometimes I mix it with G.nuts sauce. Ithink one of these days iwill prepare it like you and I see

    In uganda.
    I cook it the way you did but mixed with egg plants some times cabbage.
    I also cook it with occra and paste. Or with greens called layi or ottigo and paste with peanut bata.(roasted ground nuts then pounded)
    Some times i mix it in beens.
    And some in Binyebwa i.e pounded groundnuts

    I always add some creamy milk to the omena before the dhania,tastes yummy(almost like beaf) and also does away with the after taste. And some pilipili😋😋

    Great content. I’m West Indian and we prepare a dish just like that but we use cod fish and the white stuff we make boil dumplings and it’s really delicious . It is so nice that Tom appreciates and enjoys your native food.

    In haiti omena is called pisket, and we usually cook it the same way except with the parsley, instead with parsley we add onions,but often eaten with boiled green banana or plaintain.
