Not counting the time to cut the head off the fish or to scale the fish and I know you're using a barrel scaler but you also have to clean that scaler so that should be time included. But it's a great video on how to butterfly them.
Correct, we use a barrel scaler so scaling is a non factor when it comes it filleting speed. I would highly recommend one, it speeds up the process a lot!

Not a bad job, except perhaps cutting with a very sharp knife towards your fingers is never a good idea.
