Nice to see a perch done right it’s well worth the time to scale rather than skin them . Over 70 years ago my mother worked in a fish house and this is exactly how she did it and taught us kids. Ps I like your work bench.👍🏻😊

I can't believe I never thought of doing the first rib cuts on both sides before taking off any side. This makes it soooooo much easier, especially for really soft ones. Cheers, man!!🙂🎩

About 6 slices and you got a fillet, seven and it's skinless, same for about all panfish. I use an 8" White Stag fillet knife that is very thin and flexible and scalpel sharp.

What about the little line of bones in the middle? Do you leave that in or perch doesn’t have it? Getting ready for perch fishing next week. Thanks

You are referring to the 'Y Bones' you'll find in fish like Walleye. There are no Y Bones in Perch. Good luck Perch fishing! 😃

This is exactly how I do it. On the bigger 10+ inch perch do you cut the pin bones out from the lateral line? Greetings from Toledo
