Just got the Masterbuilt 560 and I followed this video for my first attempt at ribs. They came out great! I received nothing but compliments from my family. Thank you!
That's exactly what I like to hear.
When my pit boss pellet grill dies, I'm totally getting one of these, I was looking at the two bag sale at Lowe's, and missed charcoal, lol. So that's how you get the wood smoke flavor, you put chunks in the hopper?
Family often lie. You could have me as impartial
This is one of my favorites. Never disappoints. I have made this recipe about a dozen times in the last year for family and friends and has always been a hit. Have some on the smoker right now. Thank You
Joe. Sounds awesome brother. Enjoy and thanks for the comment.
Diggin’ that Masterbuilt 👍🏻. Like you stated...best of both worlds. Ribs look amazing. Another great video!!
Michael, Defiantly a fun cooker.
I bought the Masterbuilt 560 last week and it was used for the first time yesterday. I’ve never smoked or bbq properly before but I love bbq food. Living in Scotland our weather isn’t the most bbq friendly but I thought this kit would work for us.
Well yesterday I made baby back ribs following your instructions and can I say a huge thank you they were awesome. I used a rub & bbq sauce from a Scottish company called Angus & Oink. I’ll be checking out your other videos and can’t wait till the next time I fire up my machine.
Thank you for a great video it really helped out this bbq smoker virgin.
WOW, Thats so awesome and makes everything I do worth-while. If you have any questions you can find me here- I run it. Or email me at gallerybbq@gmail.com Welcome aboard:)facebook.com/groups/264734041353275/

Tony, Happy Anniversary and I'm so happy you enjoyed!Q Thanks for letting me know.

The George. I'll be loading them up. Brisket up next then a Roast.
Loved this video! Love your I am second band! Now to convince my wife I need this smoker!
Aaron I appreciate that. And yes, you need this smoker;).... thanks and stay safe.
I have a rectek and a green egg... Recently purchased this one off Amazon for $500. It is undoubtedly the best smoker I have. I absolutely love it. The chimney is good for about a 10-12 hour smoke before you have to add more coal. Temp holds well... I HIGHLY recommend.
Love all of your helpful info!! Thanks Tommy!
My pleasure!! Keep on commenting and ill keep on filming:)
I just bought this grill yesterday. Can’t wait to throw a slab of ribs on it. Thanks for the video!
Matt, Awesome... After you settle in with it let me know what you think. Also any questions, Reach out. gallerybbq@gmail.com. Also I have a Brisket and Chuck Roast coming. If you wAnt to see anything cooked, LMK.
That is a cool grill, really digging that! Ribs were spot on!
Thanks. So far, So good.
As my grandma used to say “that money is burning a hole in your pocket.” The masterbuilt gravity has been on my list and I’ve got to get it.
Top of the line cooker. Look around as they always go on sale this time of year!
Walmart usually puts them on sale after the summer is over if you haven't bought one yet
Just took two slabs of baby backs off the 560! Absolutely fall off the bone Tommy!! Thanks man!
Nice work Tommy. Thanks-
Use this method everytime and my ribs come out perfect!
The best. Cheers.
OMG can’t wait for it to warm up outside. Awesome Tommy
Mike, I hear that:).... Enjoy brother.
Spectacular looking baby back ribs. Those look mouthwatering. Cheers, Tommy!
Dwayne, Thanks buddy. Stay safe brother...
Outstanding work they look great.
Thanks and I do appreciate the comment.
Ordered the 800 and it’ll be here Saturday. Making these ribs Monday for the first cook. Thank You!!
Hope you enjoy
I just scored a 560 at wal mart. They're on clearance for 217.00!!!! I got mine for 200.00 cause it was missing the meat probe!!!! We did the burn off, oiled up and season burn,, Then did a chuck roast, @275 to 125 then reverse sear at 700 with apple wood in the hopper and ash pan.......OMG OMG OMG soooo freaking good!!!!! Best 200 bucks I ever spent!
Ken. It'll be hard to beat that pit for that price. Thanks-
I am totally trying this recipe right now! It's also my first attempt at cooking anything on the 560 or even a smoker.
Ron. To get me quicker email me gallerybbq@gmail.com

Nice looking ribs Tommy. That grill looks awesome too. Thanks for another great video. Hope you’re staying safe.
Mike, Thanks-. Appreciate you stopping in. Enjoy and stay safe.
A well understood video thx for sharing with us.
Thanks buddy!
Great video! I overdid my baby backs. They were on the smaller side and I followed the 3-2-1 method. Mine were ready at the 3 hour mark. At 225.
Thanks. Always trust the pull back. Also, if your un-sure, stick a toothpick in between the bones through the meat. If it moves through like butter(no resistance), they done:)... Enjoy and stay safe.
Wrap by temp, not by time and pull by temp too. Different bone size, amount of meat between bones, amount of meat after trimming, temperature of the meat going in and marbling are too many variables to just call 3-2-1.
@@Todd.T Thanks Todd.
Excellent. Getting the 560 based on your review!

Thanks. I could do ribs weekly:)....
My oldest two boys and I are going to do a rib cookoff tomorrow(rain messing us up today). We have 3 ribs and each have to make our own to see who can make the best ribs. I’m just doing my homework lol. They will be taught some basic stuff(membrane removal etc) but otherwise they are on their own. 14,13, and dad at 48. Mom and the other 3 are away for the weekend so when the cat’s away the mice are gonna play! Lol. Another great vid!
Ed. I need Pics and would love to know the winners rib recipe. Cheers. Get those boys on Sunday night:)..
Awesome gravity smoker Tommy.. As you know now the recipes are in my fb group.. The ribs looked great..! Be safe brother

I found your channel looking up this rig, subbed ya man and waiting for delivery of mine … keep keepin it real bro
Awesome thank you!
Holy cow! I mean pig. LOL. No seiously, i did the 321 with some St Louis ribs (my first 560 cook) and thought they were just about done after the "2" but stayed the course an additional 45 min (instead of the full hr) and called it done. The wife was super impressed😉 but to me they were a tad dry. This confirms my initial thoughts. 1 hr is too long at the tail end of the cook using the MB560. Gonna follow your lead on the next try!👍
My man, my man. You did not stay the course you crashed the car. lol Watch the video again. I do in this video 3/2/15 minutes. YEPPER. That 3-2-15 min..... now go at it again and LMK:)>😂😂😂😂😂😂😂😂😂😂😂😂...
Tommy your videos are great. Just got my masterbuilt 560 and your my go to guy when cook something new. With your voice your like the Bob Ross of bbq.
Very kool! 😎 Those Baby Backs looked perfect 👍🏼👍🏼 I’ve been eyeing this master built and all I gotta say is I wish they had a little more room for like two 15 lb briskets 😎 But man after watching your video I may just pull that trigger 😉
I hear they are putting out another soon... Hence the Masterbuilt Gravity Series in the name... Ric, Enjoy.

Jason buddy I appreciate that:)...
Been looking at this grill for a few weeks, It looks awesome , it could be the end of pellet grills lol. Nicely done!
Not so fast...... But it would be great to see some of the big players getting behind these types of grills.
At first I was going to get a PitBoss pellet grill but then I had a coworker who had one and he told me that he missed the charcoal taste. I got the 560 for Father’s Day and man I love it! In fact I’m attempting this recipe for ribs this weekend. Thanks!
I bought the 560 at my local Walmart in Edmonton Alberta for 250$ on clearance about 2 months ago. I also have a 2800$ louisiana grill founders series 1200 pellet grill that has been sitting for 2 months now because all I ever use now is my masterbuilt gravity.
Best grill I have ever had. Makes smoking so easy.
Skip, That's awesome... What do you like to cook best?? And if you'd like to see anything done, LMK... thanks-
@@thegalleryBBQ I've done pretty much everything except a brisket, which I am attempting this weekend. I have a charbroil egg style cooker and I always had a hard time regulating the heat, but this grill takes that worry away so I feel confident to do the brisket now. Love reversing searing steaks as well.
@@skipfrey4603 I'm guessing you saw my hot n fast brisket... Use the middle shelf to keep that heat off the bottom... Lmk how it turns out.

Haha... Thanks brother!
Oh hey James! These look delicious don't they! I just got one of these. Can't wait to get myself a Joe
Bud that last hour is the BEST part
Oh yeah!!!
Love your videos!
Would this be about the same directions for spare ribs?
One thing I noticed is when you put your tumbleweed in if you go from the bottom it's usually easier than going through the little window.
Thanks. I now just use 1/2 paper towel with 2 Tbs oil soaked to light, Works every time. The recipe on any Long meat cook will be the same. Cooking times should always be monitored for adjustments. Vids like this are more or less guidelines to follow. If you have any specific questions for a quicker response feel free to email me. gallerybbq@gmail.com

Dustin, So far so good. Although Iv had some issues in which i'll do a full walk around video soon. Right now I keep slamming everything in it to see how she performs. I'm enjoying it.....:)
Being able to quickly and easily increase the temp of a charcoal smoker like that is amazing.
Its pretty cool technology and defiantly the future of BBQ, IMHO
Making these this weekend with your jd sauce ,
I'm wondering if you have ever used a rib cooking rack , if so do you think they change anything as far as tenderness flavor etc .. ty ty Tommy .
Did you make??
@@thegalleryBBQ sauce is made and ribs and chicken on the grill , 🙏✌️
Awesome lookin bones Tommy!
Thanks Tom:).... Good stuff.
Just curious as to how you manage the hickory smoke. I saw where you added chunks to begin with but it seemed those were for future cooks since you were filling up the charcoal hopper and wouldn't use it just for the ribs. Where or how would you add wood chunks for additional smoke during the current cook? Loved the video and also really liked the review video you did, so I'm back and forth on waiting to see if they fix issues. The 1050 is just a tad out of my price range by about $500 :-).
Hi Mark and thanks for the comment. The chunks could have already been in the hopper or ill had a few chunks in the ash catcher down below. Mark, I can tell you this grill puts the smoke in smoke;).... very over-powering if not careful. Thanks bud and have a nice Easter. And of course if you have any other questions feel free to reach out here, or Email. gallerybbq@gmail.com
Hey Tommy, I bought the 50 last week and can't wait to throw down on it! I can't seem to find the rub you mentioned in the video, Joe's BBQ Rub. Where can I purchase it? And thanks for the video, it was awesome. Dave
Hi Dave. I need to make some More but here is the Ingredients for the SPG:
All measured in cups.
1 1/4 Kosher Salt
2 Coarse Ground Black Pepper
1 1/4 Granulated Garlic

which Weber. Caleb, this type of technology is the future, IMHO.... If you have any questions, Reach out here, or here gallerybbq@gmail.com
Is the smokey charcoal taste close to the taste of a stick burner or kamado? My pellet grill isn't cutting it for me.
No.... I good stick burner is super clean.
Anyone know of a mod for keeping ashes out of the cooking chamber? A lot of videos I've seen show a lot of ash flying around once the main lid is open.
Open hood slowely esp. if using Lump. Cheers
Great job on the ribs
Leon, Thanks. Thinking about doing a few racks this weekend;)...
If you do make a new video of it and I’ll be sure to check it out
Ok before I mention how good the ribs looked or how cool that electronic charcoal smoker is, let's talk about the most important part of this video. That is your Black Lab Molly. I liked your channel before, but you just earned major brownie points. Making an effort to specially prepare two ribs for your Black Lab was awesome. The one who first said; "Dog's are man's best friend" must have had a black lab! I have two Jake and Waldo. I love these two beasts. However I only give them the rib bones. You preparing two ribs for Molly was fantastic.
Ok the ribs looked great. Every time I have ever attempted the three-two-one method of rib cooking, I have never made the full six hours. Always done sooner. As for the gril / smoker, if Black Labs are man's best friend, then black charcoal is man's best cooking fuel. Along with wood, charcoal is one of mankind's two oldest cooking fuels. Archiological and anthropological evidence proves that humans were cooking on charcoal well prior to the invention of writing. The Bible even records Jesus Christ cooking fish with charcoal. See the Gospel of St. John 21:9. Now you say, that cooking with charcoal is the future! As an unashamed charcoal snob, that too makes me smile. Even if the grill has a fancy shmancy electronic computerised control system (Like HAL 9000). Ribs, Labs, & Charcoal, this video is just about perfect!
I could probably write an entire academic essay, critiqueing how much I enjoyed this video. Even so, I'll stop here. Thanks Thomas.
Robert, Post of the year!!!!!
My German Longhaired Pointer was trying to grab her ribs straight off the grill. She, like Molly got her own piece of rib ( bone removed of course) but it wasn’t enough and she turned on those big brown eyes to get some of ours. Now she knows the delights that come off the 560 I know next time she’ll be waiting at the bbq until they’re ready so she doesn’t miss out!

Family liked it. But I had two problems. The 15 minutes at the end, the bottom charred. How to prevent this? Also when I unwrapped it, there was a LOT of liquid, maybe grease, that poured out! How to handle this?
Ron. Try this. go 250f no wrap middle shelf. Take it about 4 Hrs or till your 197f in between the bones. then sauce for the last 15 min. Email me for complete directions. This is a no wrap rib! AWESOME and easy!

How efficient is this grill on charcoal, I’m thinking About this grill or a pellet and just try to see which will be the most effective cost wise after the initial cost
Cost wise, Its gonna be the pellet. Smoke and food wise, its gonna be the masterbuilt!
I see you are layering smoking wood in with the charcoal in the hopper. That makes a lot of sense. Masterbuilt says to put smoking wood in the ash pan. Have you tried that? If you didn't put wood in the charcoal hopper and relied on wood in the ash pan, I wonder how long it would take before you actually started to get smoke. It looks like if you put wood in with the charcoal you would get smoke right away. I also wonder about the intensity and purity of the smoke with both methods.
Ive done both. Once on one cook and the wood smoke taste was over powering for the wife, Perfect for me. lol Jeff, For what this does, It does it so well.
Just found you today, cheers! Stellar videos. Quick question what wood did you use and where did you get it? Didn’t see it in your description.
The wood used is any chunk like a cherry or pecan on these ribs. Cheers and if you have any other questions. LMK...
Can you put wood chunks in hopper or toss in fire box

Hey Tommy - awesome video and great product review. I was loving every second of this video expect when you glazed those beautiful ribs with what looked like Sweet Baby Ray’s BBQ sauce ;). I’m definitely picky about bbq sauce and will say Sweet Baby Rays is the worst! I always reach for bbq sauces that are NOT made with high fructose corn syrup... None the less, my real ‘smoker’ question is: with all of the wonderful flavors from charcoal and hardwood... how could any bbq sauce possibly ‘help’ the flavor? I’d imagine (again, never smoked anything before), that the bbq sauce would take away from the amazing natural charcoal smoke flavor. Thanks again - love your passion! This totally isn’t a critique on what your doing, but an honest question about creating the ‘best’ flavor (which is obviously hugely subjective). Cheers! -Scott

When you wrap it is prefered to have the meat basting in that butter sauce.
How do you like this cooker compared to the KC combo?
Cardale, That's so tough. maybe i'll do a comprising video. Defiantly pros and cons with both. The KC can do way more. The Masterbuilt cooks with Lump:)... I miss that smell in the wee hours in the AM... Appreciate the question.
Like the gravity mate? I've always loved masterbuilts electric series :)
I love the Gravity.
How can you add wood chunks to this grill? In the charcoal chute?
2 ways. Mixed in with the fuel, or in the ash catcher. cool thing is. I ran out of smoke on a long cook, and still wanted more. added a Few chunks in the ash catcher and she was raging.
