Wow look so delicious 😋 May I know, why do some recipes require only once proofing and some twice? The ingredients used look similar. What’s the difference?
1. Divide the dough right after kneading. 2. Roll the dough into dough balls. 3. Cover and set it aside to rest for 20 minutes to 30 minutes. This is to relax the gluten. 4. Add the salami and roll it to shape like in the video. 5. Let it rise till double in size before, or after adding the egg salad. Doesn't matter. You only need let it rise once. That is it. No need for first rise, simple and easy. Make sure your flour have at least 10 to 12% protein content.
