Oh Gretchen I hope you can help. I’ve been making your Swiss Buttercream for as long as I can remember and today I’ve made 4 batches and they were all soupy. I don’t know if it was the butter, the shortening or the egg whites but there is nothing I’ve changed from all my successes. I just sat down and cried because it was for a birthday cake for a friend who doesn’t like overly sweet buttercream and yours was just right. I’m so frustrated after 4 batches I should have found the problem. I made sure everything was right, egg whites stiff and bowl cool, butter and shortening at room temperature, all ingredients fresh. Nice cool day middle of winter so I’m at a loss. I gave up and I’m in a puddle of my own tears as soupy as the mix 😢
Oh no how frustrating! It's the worse when you are making a recipe you have made for years and all of the sudden it is not working out!! The first thing I would look to is the butter. I am assuming you are using cow butter since you are also using egg whites??
I only use vegan butter and this is the #1 culprit for my buttercreams to start acting strange! Depending on the moisture content of the butter it is what will make or break the recipe - literally!

@@GretchensVeganBakery oh you are so sweet for replying especially now that you only use vegan products for your recipes so it was rather a long shot that you even responded. For that I am very grateful. It is the butter, I remembered I changed butters because in Australia the butter is very yellow it’s difficult to get a white buttercream (just icing sugar and butter) no matter how long you whip it so I changed to a Danish butter which is a paler yellow and that probably has a higher moisture content. At least I know that now so thank you for your response and I’m very inspired by your journey, good luck on the rest of it😊

Hey Gretchen I've been your subscriber since the time you were doing crumb boss, I just wanted to say I literally sticked with you since the beginning and until now I'm pretty amazed on how much you accomplished , I used to miss the set you did in ur new place you went to after you sold your bakery and now you're in Florida. I'm just kind of disappointed that all of your new recipes are now vegan , I don't mind vegan and have made vegan food before but it kind of broke my heart to see that you literally changed your videos and what you make. Looking into this icing makes me wonder if you could use Crisco. I'm guessing not since I didn't see it as an alt mentioned in the comments or the blog. Also how does this hold up with roses? I'm assuming that the buttercream that you were using to make the roses in the video was this one? Have you seen vegan icing sugar in the stores?
Yes you can use Crisco, since Crisco is a solid vegetable shortening, however I dont recommend it becuase it will keave a heavy greasy mouth feel.
If you can get a Hi Ratio shortening it is the best for any icing recipe and yes to roses with this recipe

Hey! I don't know where you are, but I live in Vancouver, Canada and here at Walmart you can buy Red Path Icing Sugar (and other sugars) that are all vegan because they are not processed with bone char.

Can you overwhip earth balance? I've made lots of buttercreams with it before but the most recent time last week, I combined earth balance, organic veggie shortening, powdered sugar, and vanilla like normal but it ended up being an extremely loose icing at room temperature which doesn't really make sense since it's so chilly inside my apartment these days. Anyway I was wondering if the earth balance could lose its structure if overwhipped and separate? Any thoughts?
yes it could for sure, any "emulsion" can break under certain circumstances

Can we use solid coconut oil instead of vegetable shortening?
I have not had luck with that since Coconut Oil is either too hard (&chunky) or it is literally melting the minute you look at it! Feel free to try but I have had terrible results using it
Have you ever tried it with just veg shortening? How does it come out?
vegan butter is essentially shortening, but it has a much better taste than straight up shortening. So yes you can use it, but the butter taste really comes from the vegan butter (I like Earth balance the best)

HI! Yes it is true! Ugggh they just want to use dead animals in everything it is insane!! Some sugars are processed using Bones from animals... its bizzarre...
Is the shorting really needed could you just use a dairy free butter ?
Shortening is only needed for stability~ if you need this cake to sit out for hours (like at a wedding outdoors for example) but I almost never use shortening anymore since my cakes don't stick around long at all!

ye correct, any milk you like. The original recipe was using heavy cream, so I like to use the thickest of the milk alternatives and that for me is Oat or Soy
Why do we need shortening..is it must ?
No, I rarely use shortening anymore, it helps for stability with a heavily decorated cake, or high temperatures, but you can use all vegan butter
What brand vegan butter do you use? I made a buttercream using Earth Balance and I don’t care for the taste, it’s too salty.
I agree the earth balance is salty! Ive emailed them and asked that they make an unsalted version! (LOL with no reply!) but they do make one that is harder to find that is a soy free one, I believe that one is less salt or no salt. But you can use margarine too if you can find one with no milk it it!

No dairy in the ingredients at all. Margarine is a good example of "vegan butter" I use Earth balance brand, but there are quite a few on the market now. On the package, there will be a little D in a circle if it DOES have dairy in it

vegan butter is like margarine, which quite honestly is like shortening there is not much difference in INGREDIENTS, but in taste yes definitely.

I've made this with Crisco because I could not find Hi Ratio shortening here. I don't think this want supposed to be made with Crisco because it tasted awful.. I'm so sad. LETS TRY AGAIN... Find me some better shortening.
Yes the crisco is definitely a last resort, and since I have an impossible time getting hi ratio shortening...
But I have also made this will ALL VEGAN BUTTER since vegan butter is essentially shortening afterall.

Almost 2 years ago, I've been including this explanation in the description below my videos for those who are surprised, since before then I had been doing traditional baking:
I have been vegan for a while now and I have been super conflicted with my channel not being in alignment with my life and my beliefs I am transitioning my channel/blog to align with my beliefs, I have been veg for 8+ years and have been in severe conflict here on my channel and when I owned my bakery by promoting the exploited animal industry, so I finally "got off the fence" and decided to stop being a hypocrite and follow my heart and soul passion.
I understand not everyone cares to be open to this kind of baking
(although I have been making some of my BEST recipes more recently!)
So I hope and wish that folks will be open minded and give me the same understanding for following my heart.
This has not been the case 100% so far, as I have sadly been met with anger and hatred
However others have been showing tremendous support and encouragement. I hope you will at least give it a chance. :)
I will not eliminate my old recipes and will still help you all with baking of any kind just like always!
