      Neela N if you are lucky to get black Carrots in your local groceries then just us those as shown in the video if not then use regular carrot and some beets for the color

    thank you so much, I made kaanji following your instructions & came out perfect. I made the second batch now but the texture of water is slimy. I don't know what happened second time. I put little less salt second time & put carrots and beet roots in the boiled water to make it soft. Please can you advise what went wrong? why it is slimy? Can i still drink it after it is fermented or should I take out the carrots / beetroots from it and throw the water? or throw everything? What shoud I do?

      Mam bnaya tha last week. New matka liaa mitti ka or 1 & half kg kali gajar or 2 beet root dala tha 8 liter water main, after 3 days us k oper White colour ki kaai aa gai or smell b aai. Fungus lag gai. Phenk dia sab.. pta nai kiun hua esa

    Nishaji..mere yaha kali gajar nahi milti..to mi lal gajar mi thoda beetroot dal deti hu...isme koyle jala ker smoke bhi deti hu..bahut accha flavour aata hai..

    Hello Nisha mam. I was waiting for kali gajar this winter and it is finally available in the market. I am going to try soon. After the kanji gets over can I add some more water in the same gajar and masala?
