Wow…. This is pretty wild. Antonio, Chef Mora, was the first real chef I ever worked under when I got out of college and moved back up north to the city and got a job at Quality Meats. I learned more working under him and his sous chefs than almost any job I’ve had since. I remember the way he’d get when he’d be working on the line and get into it, frustrated at times cuz service could be pretty stressful sometimes (and to be honest I wasn’t the best employee at that point in my life at all), but he had so much grace and attention to the dishes he’d touch and finish plating. I knew he was extremely talented but could tell something about it wasn’t feeding his soul day to day; I am beyond proud to call him a role model and a mentor and to see where he’s at today. It gives me hope. And I’m so glad to have met him. Bless you, Chef!

During the lockdown, I began to examine my life and focus. I am also a full time single parent. Not having to work 80 hours a week away from my children changed me. I no longer want to chase the dream of food critics, and stars. I just want to be happy and close to my family!! We have started a family business selling pizza from home! Grew up in northern NH. Chased dreams in Boston and NYC, moved “back north” 20 years ago and I’m here to tell you, there’s nothing that beats small-town New England life in the 21st century. All the classic small town positives, coupled with the awareness and availability of “big city” cuisine/culture (usually being available within the “confines” of a day trip). Plus nature LOL

Places like these are normally in the middle of a bunch of farm land. You'll have a dozen or so families farming and a place like this will be on the main road in/out of town. Families will make a long run for groceries once a week or every other week out to "town" what ever biggest city is near them. These places get most of their business from guys heading to/from work who stop for something to eat or pick up a few things they might need. The rent on the building is next to nothing because of location and people become pretty loyal and may stop EVERY day for food or items. At least that's how it is in Missouri corn land where my wife's family come from. They will say "you wanna go down and get something to eat?" and since there is only one place in town they know what they mean.

Addition to the classic egg sandwiching on the menu; replace bacon with SCRAPPLE! I bet there’s a farm up there that makes it.

I seen Golden Flake Pork Rines from AL! Woohoo!
Down here we have Jefferson Country Store in Jefferson AL near Demopolis is very similar but Alabama style I guess. Countryer. It’s fun he cooks and you can sit a talk to strangers about everything. Very laid back and fun. I enjoyed this video. I hope they both enjoy their new lives for however long they stay.
