You can achieve the same weird death animation when fighting poseidon pig. Basically enemy that does offensive healing will have this animation.

This was actually found a really long time ago, I'm not an expert at this stuff, but I think what we can guess here is that we win the level when he hits 0 HP, however the death animation doesn't play because he immediately gains that HP back, and so the game still considers him alive even tho he's supposed to be dead, that's my guess
