I'm french and i can tell you he's a very good chef, i'm from the basque region, "itxassou" is the village where my old family grow, the cherries are big and black, sweet with amazing flavour, and we eat the jam with the cheese.

So beautiful! I love your Basque cake from 2015 -- so yummy, I know because I made it myself! Also the Sable Breton from 2012, which always is perfect, and reminds me of these Basque cakes. (Your Canelés are still my all-time favorite.)
