I have purchased freeze dried food before in the Mylar bags. However, I did not understand the added preservatives from the manufacturers. Doing it at home, you know exactly what is in your product ! I love this healthier option!
I'm a city boy and I have to tell you about my corn harvest. My neighbor planted some corn and it grew chest high, tasseled & died. He gave me his remaining seed. Well I turned my soil and noticed it was loaded with earthworm. I remember from school that earthworm make awesome soil. Well my corn grew to about 10 feet with the biggest, tastiest corn ever.

She says that when you reconstitute them - they taste just like fresh tomatoes! My hubby said if you can't keep up with your fresh tomatoes you can send some our way here in Florida! I started help canning when I was about 8/9 years old. When I got got married, I continued to can and when my kids were old enough, they helped also. My daughters also do it and my granddaughter loved helping me with canning. I canned just Roma tomatoes, they are the best to make spaghetti sauce with. I grow my own herbs and have a dehydrator and dry them. My sauce is all homemade, I was taught by my grandmother to cook when I was young because she died a month before my 10th birthday. My mom was oldest of 11 kis and youngest aunt was only 7 months older than me and we spent a lot of time together..

I have 4/10 of a acre and a little greenhouse that I overdone it on seeds this year. Gave away 44 plants of tomatoes and I planted over 50. And still have 9 more to plant. I bought a dehydrator so I am drying some food. I can too. Made soup the other day. I pulled off the shelf: potatoes, carrots, cream of mushroom soup, cream of chicken soup, yellow beans. Went to the garden pulled onions and cut some celery. I felt so good knowing I had really made in my own meal. The other day I opened a pickled beets/eggs and a half pint of that soup. My chickens contribute to my meals to. No I can't eat them cause they all love me and I can't eat them they all have names. The ducks make me laugh. Bought a pressure cooker this year so I can can faster instead of 3 hours at a time. I have had horses and took care of people's farms while they went on trips. Having a farm is alot of work and you show everyone that it takes the whole family to contribute. Love your bee hive keeping. No I don't want to do that but I would love to purchase a pint. Please let me know I will need it for my sloppy joe and ketchup recipes. I also love it in tea. Your cutting board in your kitchen is beautiful. Your freezing food is really neat. I could never afford that but I always say someday. I live on a low fixed income so I am always trying to save money to put to something to make my life easier. Keep evolving and growing as all family's do. Can't wait to see your Creek property evolve. It shows so much promise and that place is wonderful. If I was your neighbor Rachael could have some perennials for down there. My garden I started back in the 80's. Next year it should be really nice. Have some trees being taken down now and after a year of me not being able to really take care cause of the back surgery next year.

The freeze dryer appears to be a fantastic tool to help families preserve food. I call the kitchen utensil that you used for putting the tomatoes into the pot a strainer scoop, but I see someone else commented and says they are called a spider strainer. It was really nice to see you all working as a team to prepare all of the ingredients needed to make a huge batch of salsa. Well done!! Oh, also, watching how much Yoshi and Yoneg were enjoying the tomato scraps was so funny. They were really going to town over those scraps!

Absolutely agree with the flavor of Cherokee Purple being awesome! One salsa variation y'all might want to try: roast the peppers, onions, and some of the tomatoes. It adds a depth of flavor that really takes your salsa to the "next level". We just roughly chunk up or quarter the veggies we're roasting. We have also roasted some sweet corn kernels and peeled garlic cloves to add in. Love to see the teamwork in the kitchen!
By freeze drying you're taking more of the water out than by cooking it down more to get more of the consistency of the freeze dried. The good thing with the freeze dried salsa is you can add as much or little as you want. Plus I think the freeze drying concentrates the flavor better. I loved seeing you guys doing the project as a family. Maybe you can talk Caleb into helping with the next project. He seems to be camera shy, lol. Thanks for sharing. Next time I make Salsa I'm going to try adding liquid smoke. It sounds really good.❤❤
ohhh all those nice tomatoes. Ouch! so many hot peppers. I use to make Salsa but I never put as many hot peppers as you. I also use to put some corn in mine. Sure is fun. You brought back a lot of wonderful memories for me. At one time when my kids were young I canned 200 jars of fruit, pickles, jams, relishes, tomatoes etc. Hugs to Rachel.

Total envy. Had about 200-300 cherry tomatoes and several dozen large tomatoes ripening. Garden had 6ft deer fencing around it. Fencing has worked for 3 years. Sadly not this year😭. Deer got in 3 days in a row, t-posts bent, fencing riped. I got less than a dozen cherry, and only 3 very green large tomatoes. Deer have eatened all the tomatoes and the plants have zero leafs😢😢😢, no saving the plants.

Watching you guys in your garden brings back memories for me. My folks came from Oklahoma, my dad from Yale and my mom from Drumright. One thing we made with our garden produce was squash relish. I’m a old woman both my parents have passed miss them but watching you guys brings me joy. Thought I’d share my recipe with you since it calls for jalapeños and bell peppers. It’s called squash relish and you may already know this but here is our families recipe: Take 10 yellow squash and cut them in small cubes 4 large onions diced up 1 large green bell pepper chopped up 1-2 cups diced hot peppers depends on how spicy you want it. Mix all this together and sprinkle 3 Tablespoons of salt over it. Stir cover and put it in the refrigerator overnight. Rinse in cold water twice to make sure you get all the salt off. Place on the stove in large pot and add: 4 cups white sugar 2 1/2 cups white vinegar 2Tablespoons turmeric 1 teaspoon nutmeg 1 teaspoon black pepper 1 1/2 teaspoons celery seed Cook on medium heat for 20 minutes place in jars and seal. We ate this with red beans fried potatoes catfish and cornbread. But it’s great with just about anything. Hope you will give it a try. Thank you guys for sharing your family’s story it brings a lot of joy to lots of people.

I remember receiving 25# of Roma Tomatoes when I lived in Texas. As a single Senior citizen, I emailed Paula Deen and asked her what to do with them. She told me to wash them and put them in freezer bags and freeze them. So I did. I made soups, salsas, tomato pies, casseroles, etc out of them. Your tomatoes look awesome.🥰🙏🏻. If you have a freeze dryer, you can do the tomato skins for powder for your spice mixes, and veggie soups, and stews, pizza sauce mix, etc.

1 large green bell pepper chopped up
1-2 cups diced hot peppers
depends on how spicy you want it. Mix all this together and sprinkle 3 Tablespoons of salt over it. Stir cover and put it in the refrigerator overnight.
Rinse in cold water twice to make sure you get all the salt off. Place on the stove in large pot and add:
4 cups white sugar
2 1/2 cups white vinegar 2Tablespoons turmeric
1 teaspoon nutmeg
1 teaspoon black pepper
1 1/2 teaspoons celery seed
Cook on medium heat for 20 minutes place in jars and seal.
We ate this with red beans fried potatoes catfish and cornbread. But it’s great with just about anything. Hope you will give it a try. Thank you guys for sharing your family’s story it brings a lot of joy to lots of people.

I remember receiving 25# of Roma Tomatoes when I lived in Texas. As a single Senior citizen, I emailed Paula Deen and asked her what to do with them. She told me to wash them and put them in freezer bags and freeze them. So I did. I made soups, salsas, tomato pies, casseroles, etc out of them. Your tomatoes look awesome.🥰🙏🏻. I want smellovision….and a taste test please?
