When I switch to normal mode I still see eco mode with a blue bar in my gauge cluster why it won’t go away?

Absolutely it's a fantastic car. Smooth ride in all modes even sport plus. But you feel the bumps more and the engine gets very aggressive. It will launch you back into your seat if you not expecting it.
