My favourite part of using carbon steel and cast iron is for thicker cuts of meats. I can sear it on the range and finish the steak in the oven to reach internal temp! Great vid and break down of the 4 pans every kitchen needs!

前幾日我買咗兩隻Staub嘅鑄鐵鑊,都有你講呢個問題,就係好容易會出面有啲燶而入面唔熟。因為平時煎嘢我係會冚蓋,用慢火繼續煎,但係鑄鐵鑊就唔得,要打開蓋嚟煎嘢。就算冚蓋嚟煎,都要打開個蓋少少去留返一條罅。用鑄鐵鑊煎出嚟嘅肉真係好香,好容易就煎到嗰面係金黃色。煎出嚟嘅肉係真係唔同啲,食落好香口,嗰種嘅梅納反應真係出晒嚟!我諗住會買多隻De Buyer 嘅鑊嚟試下。仲有就係有大部份鑄鐵鑊同埋碳鋼鑊都係唔可以煮酸嘢,要用有琺瑯塗層嗰啲先至得。

易潔鑊壽命短 一花咗就掉得 其他果啲冇乜所謂 不銹鋼仲唔駛養鍋 不過真係各有各好
不繡鋼鑊係好用,但係佢最衰係冇乜嗰種梅納反應,即係我哋中菜講嘅鑊氣。其實Staub 、Le Creuset、Vemicular 嘅生鐵鑊同埋煲都唔使養,佢哋啲鑊同埋煲有一層琺瑯質,用洗潔精洗完抹返乾淨就得。
點解唔介紹下傳統嘅生鐵鑊 我覺得生鐵鑊最好用

空間有限只用一隻生鐵鑊,平底鑊會彈油都係一個唔用嘅原因。
呢個淨係屋企係用煤氣爐先可以咁做,電磁爐就唔得。因為電磁爐係靠個鑊底去加熱。通常我去煎嘢都係用歐式深煎鑊(saute pan),啲油就唔會飛到周圍都係。用一個深啲煲嚟煎嘢一樣可以做到呢個效果。
不銹鋼會阻擋微波。。 😂
