all correct. i have two additional tips, 1) heated to temperature (water drop test etc), add oil, then remember to dial down the heat before adding the food (cos the heat will keep on rising causing food to burn and stick 2) if cooking western food, add oil then add some butter, butter will make the food easier to slide
