Very lovely meal ideas! I have an idea about your tendonitis that might be really helpful, and explain why ketosis helps. One cause of tendon sheath inflammation is toxoplasmosis, and you can get toxoplasmosis from (get ready for this) cat poop. And, ketosis kills toxoplasma, so getting into deep ketosis might get rid of both of these problems for good. Just an idea. I've been on a ketogenic diet for several years-definitely doable and not dangerous :)

As a former traditional keto person who ate primarily plant based I can tell you from the amount of groups I have been in on fb,ppl will look for the most processed way to use up those net carbs instead of filling up on high fiber, low carb berries and veggies. So you’re exactly right. Your plant based keto wouldn’t be remotely the same as the studies. I’m primarily plant based mostly vegan now and it makes the most sense to me for my body. Your recipes look delicious ❤

This was great! I'm not keto, but my best friend is and I often have trouble knowing what to cook for her since she's not vegan, so I'm gonna file these way as ideas when I next see her. She's on keto on doctor's orders and it really works amazing for her specific problem (insulin resistance). I hope it works for you too! I get people's comments sometimes (one of my other friends got pretty sick on it, for instance), but keto is different for everyone and no single eating habit is gonna work for everyone. Also, was lovely seeing your face in this video.
SO much respect for this approach to ketosis. I have a chronic condition that is sometimes treated with the keto diet but I'm worried about how restrictive diets can be triggering but your approach seems so much softer, I love this idea of using it as a 'treatment' and as needed when you get flare ups. I also need to be able to eat whatever the hell I want at least some of the time! Can I ask if you get keto flu every time you go in and out of ketosis? That would be my only worry about this approach.
No I really don't feel unwell at all. The only thing I notice is my hands going from warm to cool. I think it is because I keep is low-carb-ish most of the time. OR maybe because I keep in lots of vegetables (which contain electrolytes) and drink lots of water? Pure speculation on my part btw. I really don't know why I never get keto flu symptoms like fatigue, headache, etc.
Keto flu is often due to lack of electrolytes (because the carb reduction means you flush out a lot of water and the water takes electrolytes with it) so being careful with that is often helpful. Okay, Mary. I have some serious vitriol toward meat-based keto because of how it played out for one of my loved ones. BUT I was very interested to see what your plant-based version would look like. It seems way more balanced! And delicious. I’m actually going to try some of these recipes 😁 and as someone with chronic pain, I totally get it. Though I don’t think I’m ready to try this method, I’m so glad its working for you 💚
I too got chronic debilitating pain post my cancer surgery. I started out by eliminating animal products then fried food. Finally i limit fat & oil to 10% of my total daily calories. It does help rid of the pain & mostly the intensity of the pain.
vegan keto is just no starch. keto (with meat) was a reaction to a health minister declaring pritiken diet to be the healthiest on earth. meat heavy diets are all toxic. end of.
Hi, Mary. I just wanted to say thank you and offer encouragement. I eat an extreme anti-inflammatory diet due to my chronic health issues. We don't have a full picture of what's going on yet but I also have random allergic reactions to things I'm not allergic to. I have fatigue, muscle spasms, nerve pain, poor sleep, digestive issues, anxiety, etc. I had the allergy testing and am following up with my GP and allergist. But on my own, I tried an elimination diet and found what works for me. It's a weird feeling when you realize that the otherwise-healthy things you're eating on a daily basis are what's been hurting you for so long. I reported back to my doctors and they were surprised that food was having such an impact. Now we have a better idea of why I'm having these symptoms. I try to watch my nutrition since I have to limit/avoid a lot of foods - that is my biggest concern for the long term. But I think once you know what works for you (and everyone should remember we are all different, health-wise), you have to stick with that. Like you, it has been a tremendous relief to get my life/energy/ability to work back by reducing inflammation. People who haven't gone through your pain cannot imagine what that is like. I wish you the healthiest you that you can be! (And thanks for reminding me about Chronometer - I had forgotten about them!)
Mary, great video! I had chronic tendinitis in both arms for a long time. My go to therapy was hot and cold contrast baths for my arms, forearms, and elbows. It works best if you have a double sink but a single sink with a basin works too. Fill up on sink with ice cold water. I add ice cubes too. Dill up the other sink with very warm water. Then start dipping your arms in the cold water until you can’t stand it. Then switch and dip your arms in the hot water. I used to do this for 30 minutes at least twice a day. It helped tremendously for pain reduction. I used to boil the kettle to top up the hot water in the sink as it cools down over time from dipping your arms back and forth.
I did the hot and cold treatments too! haha bane of my existence. Now, by keeping up with daily nutrition and staying on a keto diet longer tern, I have absolutely no pain :-) no more hot and cold baths necessary and I can work all day like a normal person again!

Kudos to you! I've been a big fan of Heavenly Fan for a couple of years. I do Vegan Keto often, for my own reasons. As you mentioned, many people equate keto with meat-based keto & can't see the potential for a healthier plant-based/vegan keto option that includes plenty of nuts, seeds, avocado, olives, etc. Haven't seen any research on plant-based/vegan keto either. Glad you are doing what works for you.

I appreciate you’re take on vegan keto. I worked for a restauranteur who was making the restaurant switch to keto and as a vegan (and chef) I was always attempting vegan keto recipes. It was a fun challenge for sure! Also, I’ve considered the possibility of attempting to use ketosis to help my chronic migraines but have never really done the work to make sure I knew all I needed to know to do it right. So good one you! AND I’ve made about 5000 avocado roses in my life and yours look great! 🥑🌹

Right?! That's the thing. I don't think just living with years and years of pain (meaning chronic inflammation) is healthy either. That's associated with cancer risk and a multitude of badness.

I also feel that it stabilizes my bipolar symptoms better than my mood stabilizers, which makes sense since a ketogenic diet is one of the most successful and earliest forms of treatment for neurological disorders like epilepsy. There is a time a place for using it judiciously and mindfully.

I really enjoyed this video. I also have inflammation and it impacts my hands and arms. Some days, so painful I can’t even lift a bag, steer my car properly or pet my cats. That pain is debilitating. A year ago, I switched to plant based and I’ve had zero pain since. Only took about 3 days to notice the pain significantly decreased. Now doing a similar version of keto vegan as yourself. Not fussed over numbers either and just want to maintain a healthy plant based lifestyle to keep the pain away, but also have always loved the idea behind keto. It was actually recommended to me my medical team about 5 years ago (to manage weight. I have since had gastric sleeve 4 years ago) This is really helpful and excited to watch your other plant based videos now. Thank you for sharing your journey and beautiful food.

I know this is a year old, but I just came to it, and thanks! I'm 47, gently entering into the dreaded 'peri-menopause' stage, have somehow put on way too much weight, and plus I have psoriatic arthritis which is going through a major flare atm. I did a diet a few years back where I gave up sugar, and I did notice a huge improvement in my inflammation levels, and I've been building up to cutting out gluten and dairy (which I know are the most likely culprits for auto immune problems)...but I live in rural Italy and frankly just being vegetarian is already a bit of a challenge eating out, and I feel like if I cut out pasta and pizza i'd be super restricted. But your video has given me inspiration and confidence to try. Thanks!

it's so sweet to see you on camera. I've been a fan for years and have always loved your creative foodie content. I work in a bakery and saw some of your keto bread recipes recently which caught my attention. I recently got diagnosed with POS and am trying to navigate how to go about best treating. My doctor told me to follow a low GI and limit snacking, which is just so unlike my current eat-whatever-I-want vegan diet. And, I'm seeing more content about POS and keto, so thinking it might be an option for me. Your meals just look so "normal" and it's great to see. The first video that comes up on youtube for me when searching vegan keto has breakfast as just half an avocado and coffee... which might kill me. Tofu avo toast sounds so much better! Great video! A couple of years ago I started vegan keto for weight loss. After the initial few days (keto flu) I felt amazing, very alert and energized. Dropped some weight and I felt balanced, never stuffed or bloated. My monthly cycles were a breeze without any cramps. I was following the standard keto macros. Then awhile later, I started reading how even vegan keto is not healthy because of all the fat consumption. So, needless to say I stopped vegan keto, gained all the weight back and feel inflamed and bloated. In hindsight, the fat I was eating on vegan keto was along the lines of what you ate in this video....olive oil, avocado, nuts and seeds which is all healthier forms of fat so it can't be all that bad. I know I felt my best eating vegan keto. I would love to see more on this. By the way I'm also a fan of Heavenly Ham and Keto Jamaican Girl.😊

I needed this a week ago! 😆 Had to eat very low carb (basically keto) for two days to prep for a PET scan. To be honest I would not recognize anything you ate in this video as "keto" if you hadn't told me. It just looks like good plant based food to me!

Hello Mary! You do you. Everyone is different. I do vegan keto and it has done so much good for my body. There are so many foods that naturally have lots of protein. I reduced if not eliminated inflammation and pain in my body since doing vegan keto. What works for me may not work for others. I find telling people that I am vegan keto was like talking about religion or politics. Everyone has an opinion that works well for them. You just have to do you. Good luck and many blessings! I'm vegan keto for managing my autoimmune condition and also weight loss. I've been plant based low carb for about 7 years now and EVERY SINGLE TIME I start adding more carbs in,(meaning more than 50-60 grams per day) even healthy carbs like sweet potatoes, I start getting flare ups, sick, tired, and gaining weight. I get my labs done, each year, and my cholesterol levels are ALWAYS perfect, I always get enough fiber, my protein levels are high, and there are so many vegan sources of proteins from beans to chia seeds,...I remember one year my doctor told me my protein was TOO high and I needed to lower my protein intake...as a Vegan. At the end of the day there is no one size fits all, and people need to determine what is working for THEIR unique biochemics. Also you are right, there are no specific studies on vegan keto diet, and so much of the information available....but I will say I feel a lot better eating vegan keto, than eating carnivore keto (which I did prior to going plantbased) for so many reasons. You CAN get plenty of fiber in a carnivore keto diet simply by eating vegetables & seeds into your diet....it's not even that difficult, it's even easier when doing Plant based keto. I deeply appreciate your channel, even though some of your most delicious recipes contain gluten and soy which I can't have ....lol.....but I appreciate it all the same!!!
5:15 You can easily get the seed out of the avocado half if you chop with a sharp knife on the seed to make it stick to the knife, then turn the knife like the arm of a clock to twist the seed out. But this is most easily done before you have peeled the avocado.
@@marystestkitchen Oh, I just looked it up, and poor anyone who has cut their hand that way, ouch! I think the trick is to keep your knife really sharp so that you only need a gentle tap to cut into the seed; that way you get much better precision, and if you still miss the seed you will not cut through the avocado. I use the trick all the time and I have never felt that there has been any risk of cutting myself.

I've been on keto and low-carb diet these past 2 months because of my insulin resistance, which I reversed :) Similar to you, my symptoms were not present at all when i do this diet. My symptom is reactive hypoglycaemia, which was understandably caused by high sugar/carb intake. During these months, I cycle my carb, so there are days (usually weekends) when i eat simple carbs (still no or minimum added sugar), but since the rest of the days my habit supports my stable blood sugar level, I don't find any dizzy spells.

Sorry I don't have the package anymore but I just bought the ketone test strips from my local drug store. I think they are all the same? I just bought the cheapest ones haha Hope you can find relief like I did. I was a massage therapist for years. I don't know if this will help with something chronic, but the carpal nerve is connected to stuff in your shoulder blad area (path). If you find a good therapist who knows about that stuff (usually working for a chiropractor), they can work on that area for you. It always worked really well for my clients. Just a thought.

My partner also lives with chronic pain and they were on a strictly keto diet for a couple years, during which they said they had the lowest pain levels of their life, but that the diet was annoying to keep up every day for years. I have noticed so many health benefits between when I'm eating keto vs when I'm not. I'm not vegan, however, I eat a lot of plant based foods and a lot of fiber. Many of the keto recipes I use depend on fiber as a substitute for thickening agents such as starch. I will use plain psyllium powder to thicken soups (go sparingly) and flax seed or oat bran to give texture to breads. I actually get more fiber when one keto than when I'm not. As far as health, my overall blood panel improved significantly within a couple months. All the major markers such as cholesterol (both LDL and HDL), triglycerides, creatin, bun creatin ratio, hbA1c, etc were within the optimal range for the first time in 20 or 30 years. This was significant, since diabetes management was the main reason for exploring keto. I've been on a keto diet off and on for 3 years. When I go off everything suffers. Blood sugars go up, pain increases, I get bloated, my acid reflux increases, and overall digestion becomes worse. So why don't I do it all the time? Well, being blunt about it. It's a pain in the ass. It's not convenient. I cook meals for other people who aren't on keto, so I either fix them keto anyway (okay to do periodically), fix two separate meals or variations of the same meal, or eat what they eat. These choices tend to operate on a sliding scale of how motivated I feel. One note about the negative studies citing how bad keto is for you: the vast majority you'll find are short term, small population samples, or both; which indicates poor studies that were done quickly to support their own confirmation bias. Although the keto diet has been popularized recently, it has been around since the mid 20th century. It was developed as a way to treat various medical conditions and it still used for those successfully today. It's show positive results for treating a variety of neurological conditions such as epilepsy, bipolar disorder, and depression; as well as inflamitory diseases such as fibromyalgia and diabetic neuropathy in addition to managing HbA1c levels. All that aside, thank you so much for this chanel. I enjoy your videos so much. They have inspired me to experiment and I am considering a chanel of my own to share the keto recipes and shortcuts that I've developed on my own.
Hi Mary! I have an autoimmune that causes a lot of inflammation and have also had a few bouts of "treatment" keto. I'm not sure if there is any science out there, and I don't really buy the diet for long term lifestyle changes, but every time I get back to it, people just assume and say things like, "oh the first few pounds are just water weight" and then I just cheer internally because YES, THAT IS WHAT I WANT! I WANT THE EXTRA GONE. IT HURTS. Also the foodie in me loves kitchen tinkering. Restrictions almost become a fun challenge or game, like give me the allergies, give me your food sensitivities and I can still make yummy food for you (or just myself).
Very interesting! Is the tendinitis an autoimmune thing? I have just been diagnosed with rheumatoid arthritis and I'm on a whole plant based elimination diet, which has already worked wonders in a few weeks, it has a focus on gut healing but cuts out all fats and allows some carbs I wouldn't necessarily expect based on other cleanse diets or autoimmune protocols I am aware of. I don't know that much of the theory behind it but it is working. I have also been very interested in trying vegan keto and I like how you use this in your own way for a specific purpose and it works for you, that's awesome! I have looked up videos before and not found a lot on the subject or for ideas. It's polar opposite of how I'm eating right now, I'm not having soy either. I might have to try at some point. I intermittent fast so think it could be the right way to get into ketosis. Thank you, very interesting 😊
Sometimes it is but I don't really know about mine. Intermittent fasting is totally a way to experience ketosis without changing your diet. That's actually how I figured out what ketosis actually feels like and the effect on my tendonitis. The inflammation came back soon after breaking my fasts though (until I started the low carb thing)

Meat based keto is the last thing his heart needs, so I watch your videos for ideas on how I can help him still keep his blood sugar in check without raising his cholesterol. He's already had a heart attack so I don't think I'm being extreme. Like you said, vegan keto isn't for everyone, but for some, it's a great option.
My opinion is: You do what you need to do for your body. As for weight loss (I know you said that's not your objective), ketosis *does* assist in weight loss. I mean, ketosis makes the body use fat for fuel, and not muscle and other proteins. That's what ketosis IS. I love you videos. I'm really looking forward to making the pumpfu. I ordered the ingredients, and a son as I can, Imma make it.
Mmmm, I love soy curls. I rehydrate them by filling a 12in fry pan half way with water and some Better Than Bouillon (either Not Chicken or Not Beef flavors), bring it to a boil, add the soy curls, reduce heat to a simmer, cook down until there's no broth left, and then let them brown for a bit. When I've just used water there's still a bit of soybean flavor, but I've found this way eliminates that. I never thought about putting them in the air fryer or baking them afterwards though! I'm definitely gonna to need to try that! I tried vegan Keto once at the recommendation of my doctor and failed... HARD. 😄 This makes me want to try again. Could be a good subject for a future cook book eh?? 😃😉
Dude, I do not know if I have enough recipes for a cookbook! I really keep it simple whenever I'm doing the keto protocol...though...it's a good idea! You're going to love air fryer soy curls btw. Honestly pan fried is good too but just having the variety is really nice.
I'm back on fruit based because of health issue as well. I know that is criticized harshly nowadays as well. However, I don't care what you eat. I find your meals all look yummy and theyre inspiring. I too keep a balance by allowing myself to eat things I crave and love to be able to have my family join in on a plant based meal 😋
I really liked how you explained everything here about your diet (plus you're always so calm and sassy at the same time - I love your videos in general), and also (to be honest) how very un-keto your vegan keto diet is (because technically there's a LOT of carbs in vegan protein). 😃 Vegan keto is probably pretty safe when done as you do it (so with a good solid brain and a lot of home cooking!!!) - where real keto is and should stay a temporary fix done under strict medical monitoring. Also I read that you said in a comment that you ended up realising that removing your trigger foods made you keto, instead of you deciding to be keto out of the blue, and that's the most sensible thing I've read about diet changes too. And I'm there with you: wheat kills me (not gluten, not the same thing) so I eat as little as possible, knowing that whenever I do crave some good old pastas I'm going to regret it for days. It's my choice as a vegan adult with an excellent diet but suffering from chronic pain to sometimes remove or sometimes eat trigger foods, and I deal with the consequences. All in all, I think your diet is pretty close to mine (what with me avoiding wheat), I just eat rice twice a week and a bit of bread during the weekend because it's part of my culture (Jewish people love their Challah bread for Shabbat). Funny that! 🤩 I wish you all the best with it, and hopefully your pain levels will stay manageable. Personally keto freed up my orthorexia. I was vegan before and found out I cannot process plant proteins as well, however I was literally obsessed with the diet. That's all I researched and that's all I talked about. With keto, all I need to worry about is carbs. Not my ideal diet by far, but I have lost 100 pounds with it. Also it lowered my LDL and for the first time in my life my HDL was at a healthy level
I think Vegan YT is keeping the Butler Foods company afloat through the pandemic era, LOL! I briefly cooked a vegan keto diet for personal chefing clients of mine, and became fascinated by the fact that it's more feasible than the gross non-vegan version and seems to require less stringency to achieve ketosis (a thing the gross version adherents HATE to hear). I wish you good luck with quelling the inflammation for longer periods, Mary, as I know how badly losing the ability to do manipulative activities can suck. Thanks for posting!

I like using your recipes to help with my diabetes. I’m not worried about ketosis but I do worry about large and frequent blood sugar spikes. Also getting enough protein in!
I’m gonna eat more soy curls! Question, if I make my own cauliflower rice, can I make more than one serving at a time? And if yes, best way to store them? Don’t worry about those negative comments, people need to take your wonderful ideas and convert them to their needs. Also, I get crazy bitter tongue from pine nuts, which is sad because they are delicious. What would you substitute for pine nuts? I try to keep low fat because I have crazy high blood lipids. Right now my triglycerides are 500, so I should try to lower my carbs. I’m only 125lbs and not diabetic and don’t drink alcohol, but my doctor put me on fish oil to try to lower my triglycerides, but I hate to have an animal product back in my diet. I’m thinking of trying to be a bit more vegan keto and see if that helps. Your videos will be a big help for me
Yay for soy curls! Yes, you can make cauliflower rice in advance. I usually make a whole head and then store it in tupperware in the fridge. Put a paper towel in the box to absorb condensation. I try to use up in 3 or 4 days though. I haven't tried freezing but I think that could work too. Instead of pine nuts, try pecans or macadamia. They are so over the top delicious especially when you pan toast them yourself. Hope your health improves!
I'm watching your video to get an idea what to eat. Last month, I was diagnosed with T2 diabetes. I stopped eating rice, bread, pasta, sugary drinks, processed food and fast food. I recently got a blood test and uric acid is high, need to avoid eating red meat and seafood. I don't know what to eat anymore, I don't want to eat rice or bread cause I'm avoiding blood sugar spike.

You were absolutely right about me to being great for short term health for certain conditions. It isn’t supposed to be used for long term diet. But plant based should be 100% better in general. And I could ramble on. It doesn’t help that holistic health is my life lol

@@marystestkitchen Zero is totally possible, I believe but for sure I can only advise anti inflammatory herbs be added in very small amounts daily to your meals. Like turmeric and organic if possible is always best.

Very lovely meal ideas! I have an idea about your tendonitis that might be really helpful, and explain why ketosis helps. One cause of tendon sheath inflammation is toxoplasmosis, and you can get toxoplasmosis from (get ready for this) cat poop. And, ketosis kills toxoplasma, so getting into deep ketosis might get rid of both of these problems for good. Just an idea. I've been on a ketogenic diet for several years-definitely doable and not dangerous :)

As a former traditional keto person who ate primarily plant based I can tell you from the amount of groups I have been in on fb,ppl will look for the most processed way to use up those net carbs instead of filling up on high fiber, low carb berries and veggies. So you’re exactly right. Your plant based keto wouldn’t be remotely the same as the studies.
I’m primarily plant based mostly vegan now and it makes the most sense to me for my body.

This was great! I'm not keto, but my best friend is and I often have trouble knowing what to cook for her since she's not vegan, so I'm gonna file these way as ideas when I next see her. She's on keto on doctor's orders and it really works amazing for her specific problem (insulin resistance). I hope it works for you too!

SO much respect for this approach to ketosis. I have a chronic condition that is sometimes treated with the keto diet but I'm worried about how restrictive diets can be triggering but your approach seems so much softer, I love this idea of using it as a 'treatment' and as needed when you get flare ups. I also need to be able to eat whatever the hell I want at least some of the time! Can I ask if you get keto flu every time you go in and out of ketosis? That would be my only worry about this approach.
No I really don't feel unwell at all. The only thing I notice is my hands going from warm to cool.
I think it is because I keep is low-carb-ish most of the time. OR maybe because I keep in lots of vegetables (which contain electrolytes) and drink lots of water? Pure speculation on my part btw.
I really don't know why I never get keto flu symptoms like fatigue, headache, etc.
Keto flu is often due to lack of electrolytes (because the carb reduction means you flush out a lot of water and the water takes electrolytes with it) so being careful with that is often helpful. Signed: someone who´ll never be keto because wheat is life but thinks everyone should eat what works for them.

I too got chronic debilitating pain post my cancer surgery. I started out by eliminating animal products then fried food. Finally i limit fat & oil to 10% of my total daily calories. It does help rid of the pain & mostly the intensity of the pain.

vegan keto is just no starch. keto (with meat) was a reaction to a health minister declaring pritiken diet to be the healthiest on earth. meat heavy diets are all toxic. end of.
Hi, Mary. I just wanted to say thank you and offer encouragement. I eat an extreme anti-inflammatory diet due to my chronic health issues. We don't have a full picture of what's going on yet but I also have random allergic reactions to things I'm not allergic to. I have fatigue, muscle spasms, nerve pain, poor sleep, digestive issues, anxiety, etc. I had the allergy testing and am following up with my GP and allergist. But on my own, I tried an elimination diet and found what works for me. It's a weird feeling when you realize that the otherwise-healthy things you're eating on a daily basis are what's been hurting you for so long. I reported back to my doctors and they were surprised that food was having such an impact. Now we have a better idea of why I'm having these symptoms.
I try to watch my nutrition since I have to limit/avoid a lot of foods - that is my biggest concern for the long term. But I think once you know what works for you (and everyone should remember we are all different, health-wise), you have to stick with that. Like you, it has been a tremendous relief to get my life/energy/ability to work back by reducing inflammation. People who haven't gone through your pain cannot imagine what that is like. I wish you the healthiest you that you can be! (And thanks for reminding me about Chronometer - I had forgotten about them!)

Mary, great video! I had chronic tendinitis in both arms for a long time. My go to therapy was hot and cold contrast baths for my arms, forearms, and elbows. It works best if you have a double sink but a single sink with a basin works too.
Fill up on sink with ice cold water. I add ice cubes too. Dill up the other sink with very warm water. Then start dipping your arms in the cold water until you can’t stand it. Then switch and dip your arms in the hot water.
I used to do this for 30 minutes at least twice a day. It helped tremendously for pain reduction. I used to boil the kettle to top up the hot water in the sink as it cools down over time from dipping your arms back and forth.
I did the hot and cold treatments too! haha bane of my existence. Now, by keeping up with daily nutrition and staying on a keto diet longer tern, I have absolutely no pain :-) no more hot and cold baths necessary and I can work all day like a normal person again!

Kudos to you! I've been a big fan of Heavenly Fan for a couple of years. I do Vegan Keto often, for my own reasons. As you mentioned, many people equate keto with meat-based keto & can't see the potential for a healthier plant-based/vegan keto option that includes plenty of nuts, seeds, avocado, olives, etc. Haven't seen any research on plant-based/vegan keto either. Glad you are doing what works for you.

I am vegan (7yrs) and I think if you’re going to do keto…vegan is the way to go! Even though Dr. Kim Williams (past President of the American College of cardiology and plant-based diet doctor) stated that vegan keto was the only keto diet that was actually beneficial to health. That’s what he’s seen in practice and in the literature.

Thanks for the great content, as always Mary. My feeling is that you’re an informed adult, and you can make your own health decisions. I wouldn’t be concerned about the naysaying. I personally feel much better when I’m in ketosis, my muscle and joint inflammation almost vanish entirely.
Right?! That's the thing. I don't think just living with years and years of pain (meaning chronic inflammation) is healthy either. That's associated with cancer risk and a multitude of badness.

I also feel that it stabilizes my bipolar symptoms better than my mood stabilizers, which makes sense since a ketogenic diet is one of the most successful and earliest forms of treatment for neurological disorders like epilepsy. There is a time a place for using it judiciously and mindfully.

I really enjoyed this video. I also have inflammation and it impacts my hands and arms. Some days, so painful I can’t even lift a bag, steer my car properly or pet my cats. That pain is debilitating.
A year ago, I switched to plant based and I’ve had zero pain since. Only took about 3 days to notice the pain significantly decreased.
Now doing a similar version of keto vegan as yourself. Not fussed over numbers either and just want to maintain a healthy plant based lifestyle to keep the pain away, but also have always loved the idea behind keto. It was actually recommended to me my medical team about 5 years ago (to manage weight. I have since had gastric sleeve 4 years ago)

I know this is a year old, but I just came to it, and thanks! I'm 47, gently entering into the dreaded 'peri-menopause' stage, have somehow put on way too much weight, and plus I have psoriatic arthritis which is going through a major flare atm. I did a diet a few years back where I gave up sugar, and I did notice a huge improvement in my inflammation levels, and I've been building up to cutting out gluten and dairy (which I know are the most likely culprits for auto immune problems)...but I live in rural Italy and frankly just being vegetarian is already a bit of a challenge eating out, and I feel like if I cut out pasta and pizza i'd be super restricted. But your video has given me inspiration and confidence to try. Thanks!

I work in a bakery and saw some of your keto bread recipes recently which caught my attention. I recently got diagnosed with POS and am trying to navigate how to go about best treating. My doctor told me to follow a low GI and limit snacking, which is just so unlike my current eat-whatever-I-want vegan diet. And, I'm seeing more content about POS and keto, so thinking it might be an option for me. Your meals just look so "normal" and it's great to see. The first video that comes up on youtube for me when searching vegan keto has breakfast as just half an avocado and coffee... which might kill me. Tofu avo toast sounds so much better!

Having been a juvenile diabetic for the majority of my life, every one of my docs has told me to stay far away from meat-based keto, but plant-based keto gets their thumbs up. Great video! A couple of years ago I started vegan keto for weight loss. After the initial few days (keto flu) I felt amazing, very alert and energized. Dropped some weight and I felt balanced, never stuffed or bloated. My monthly cycles were a breeze without any cramps. I was following the standard keto macros. Then awhile later, I started reading how even vegan keto is not healthy because of all the fat consumption. So, needless to say I stopped vegan keto, gained all the weight back and feel inflamed and bloated. In hindsight, the fat I was eating on vegan keto was along the lines of what you ate in this video....olive oil, avocado, nuts and seeds which is all healthier forms of fat so it can't be all that bad. I know I felt my best eating vegan keto. I would love to see more on this.

Hello Mary! You do you. Everyone is different. I do vegan keto and it has done so much good for my body. There are so many foods that naturally have lots of protein. I reduced if not eliminated inflammation and pain in my body since doing vegan keto. What works for me may not work for others. I find telling people that I am vegan keto was like talking about religion or politics. Everyone has an opinion that works well for them. You just have to do you. Good luck and many blessings! I'm vegan keto for managing my autoimmune condition and also weight loss. I've been plant based low carb for about 7 years now and EVERY SINGLE TIME I start adding more carbs in,(meaning more than 50-60 grams per day) even healthy carbs like sweet potatoes, I start getting flare ups, sick, tired, and gaining weight. I get my labs done, each year, and my cholesterol levels are ALWAYS perfect, I always get enough fiber, my protein levels are high, and there are so many vegan sources of proteins from beans to chia seeds,...I remember one year my doctor told me my protein was TOO high and I needed to lower my protein intake...as a Vegan. At the end of the day there is no one size fits all, and people need to determine what is working for THEIR unique biochemics. Also you are right, there are no specific studies on vegan keto diet, and so much of the information available....but I will say I feel a lot better eating vegan keto, than eating carnivore keto (which I did prior to going plantbased) for so many reasons. You CAN get plenty of fiber in a carnivore keto diet simply by eating vegetables & seeds into your diet....it's not even that difficult, it's even easier when doing Plant based keto. I deeply appreciate your channel, even though some of your most delicious recipes contain gluten and soy which I can't have ....lol.....but I appreciate it all the same!!!

5:15 You can easily get the seed out of the avocado half if you chop with a sharp knife on the seed to make it stick to the knife, then turn the knife like the arm of a clock to twist the seed out. But this is most easily done before you have peeled the avocado.

@@marystestkitchen Oh, I just looked it up, and poor anyone who has cut their hand that way, ouch! I think the trick is to keep your knife really sharp so that you only need a gentle tap to cut into the seed; that way you get much better precision, and if you still miss the seed you will not cut through the avocado. I use the trick all the time and I have never felt that there has been any risk of cutting myself.

I've been on keto and low-carb diet these past 2 months because of my insulin resistance, which I reversed :) Similar to you, my symptoms were not present at all when i do this diet. My symptom is reactive hypoglycaemia, which was understandably caused by high sugar/carb intake. During these months, I cycle my carb, so there are days (usually weekends) when i eat simple carbs (still no or minimum added sugar), but since the rest of the days my habit supports my stable blood sugar level, I don't find any dizzy spells.

I was a massage therapist for years. I don't know if this will help with something chronic, but the carpal nerve is connected to stuff in your shoulder blad area (path). If you find a good therapist who knows about that stuff (usually working for a chiropractor), they can work on that area for you. It always worked really well for my clients. Just a thought.
Absolutely massage helps when there is a problem. But I don't have any symptoms since sticking to a keto diet for a while now 🤗

My partner also lives with chronic pain and they were on a strictly keto diet for a couple years, during which they said they had the lowest pain levels of their life, but that the diet was annoying to keep up every day for years. Now they do something similar to you, where they switch into a keto diet when they are having flair-ups and it seems to be working well for them. Glad its working well for you too!!

I have noticed so many health benefits between when I'm eating keto vs when I'm not. I'm not vegan, however, I eat a lot of plant based foods and a lot of fiber. Many of the keto recipes I use depend on fiber as a substitute for thickening agents such as starch. I will use plain psyllium powder to thicken soups (go sparingly) and flax seed or oat bran to give texture to breads. I actually get more fiber when one keto than when I'm not.
As far as health, my overall blood panel improved significantly within a couple months. All the major markers such as cholesterol (both LDL and HDL), triglycerides, creatin, bun creatin ratio, hbA1c, etc were within the optimal range for the first time in 20 or 30 years. This was significant, since diabetes management was the main reason for exploring keto.
I've been on a keto diet off and on for 3 years. When I go off everything suffers. Blood sugars go up, pain increases, I get bloated, my acid reflux increases, and overall digestion becomes worse.
So why don't I do it all the time? Well, being blunt about it. It's a pain in the ass. It's not convenient. I cook meals for other people who aren't on keto, so I either fix them keto anyway (okay to do periodically), fix two separate meals or variations of the same meal, or eat what they eat. These choices tend to operate on a sliding scale of how motivated I feel.
One note about the negative studies citing how bad keto is for you: the vast majority you'll find are short term, small population samples, or both; which indicates poor studies that were done quickly to support their own confirmation bias.
Although the keto diet has been popularized recently, it has been around since the mid 20th century. It was developed as a way to treat various medical conditions and it still used for those successfully today. It's show positive results for treating a variety of neurological conditions such as epilepsy, bipolar disorder, and depression; as well as inflamitory diseases such as fibromyalgia and diabetic neuropathy in addition to managing HbA1c levels.
All that aside, thank you so much for this chanel. I enjoy your videos so much. They have inspired me to experiment and I am considering a chanel of my own to share the keto recipes and shortcuts that I've developed on my own.

Hi Mary! I have an autoimmune that causes a lot of inflammation and have also had a few bouts of "treatment" keto. I'm not sure if there is any science out there, and I don't really buy the diet for long term lifestyle changes, but every time I get back to it, people just assume and say things like, "oh the first few pounds are just water weight" and then I just cheer internally because YES, THAT IS WHAT I WANT! I WANT THE EXTRA GONE. IT HURTS. Also the foodie in me loves kitchen tinkering. Restrictions almost become a fun challenge or game, like give me the allergies, give me your food sensitivities and I can still make yummy food for you (or just myself).
haha right? By now EVERYONE and their mother knows the first bit is water weight. And sometimes that's a good thing too!
Very interesting! Is the tendinitis an autoimmune thing? I have just been diagnosed with rheumatoid arthritis and I'm on a whole plant based elimination diet, which has already worked wonders in a few weeks, it has a focus on gut healing but cuts out all fats and allows some carbs I wouldn't necessarily expect based on other cleanse diets or autoimmune protocols I am aware of. I don't know that much of the theory behind it but it is working. I have also been very interested in trying vegan keto and I like how you use this in your own way for a specific purpose and it works for you, that's awesome! I have looked up videos before and not found a lot on the subject or for ideas. It's polar opposite of how I'm eating right now, I'm not having soy either. I might have to try at some point. I intermittent fast so think it could be the right way to get into ketosis. Thank you, very interesting 😊
Sometimes it is but I don't really know about mine. Intermittent fasting is totally a way to experience ketosis without changing your diet. That's actually how I figured out what ketosis actually feels like and the effect on my tendonitis. The inflammation came back soon after breaking my fasts though (until I started the low carb thing)

This was lovely to watch, your approach makes so much sense! I think people are triggered by the mention of keto because they associate it with weight loss and diet culture, but as you say some feel that veganian is also just about weight loss and that's certainly not the case!

I appreciate your video. I am vegan but my dad isn't and he has Type 1 diabetes and also on cholesterol medication. Meat based keto is the last thing his heart needs, so I watch your videos for ideas on how I can help him still keep his blood sugar in check without raising his cholesterol. He's already had a heart attack so I don't think I'm being extreme. Like you said, vegan keto isn't for everyone, but for some, it's a great option.
My opinion is: You do what you need to do for your body. As for weight loss (I know you said that's not your objective), ketosis *does* assist in weight loss. I mean, ketosis makes the body use fat for fuel, and not muscle and other proteins. That's what ketosis IS.

Mmmm, I love soy curls. I rehydrate them by filling a 12in fry pan half way with water and some Better Than Bouillon (either Not Chicken or Not Beef flavors), bring it to a boil, add the soy curls, reduce heat to a simmer, cook down until there's no broth left, and then let them brown for a bit. When I've just used water there's still a bit of soybean flavor, but I've found this way eliminates that. I never thought about putting them in the air fryer or baking them afterwards though! I'm definitely gonna to need to try that!
I tried vegan Keto once at the recommendation of my doctor and failed... HARD. 😄 This makes me want to try again.

I'm back on fruit based because of health issue as well. I know that is criticized harshly nowadays as well. However, I don't care what you eat. I find your meals all look yummy and theyre inspiring. I too keep a balance by allowing myself to eat things I crave and love to be able to have my family join in on a plant based meal 😋

I really liked how you explained everything here about your diet (plus you're always so calm and sassy at the same time - I love your videos in general), and also (to be honest) how very un-keto your vegan keto diet is (because technically there's a LOT of carbs in vegan protein). 😃
Vegan keto is probably pretty safe when done as you do it (so with a good solid brain and a lot of home cooking!!!) - where real keto is and should stay a temporary fix done under strict medical monitoring.
Also I read that you said in a comment that you ended up realising that removing your trigger foods made you keto, instead of you deciding to be keto out of the blue, and that's the most sensible thing I've read about diet changes too.
And I'm there with you: wheat kills me (not gluten, not the same thing) so I eat as little as possible, knowing that whenever I do crave some good old pastas I'm going to regret it for days. It's my choice as a vegan adult with an excellent diet but suffering from chronic pain to sometimes remove or sometimes eat trigger foods, and I deal with the consequences.
All in all, I think your diet is pretty close to mine (what with me avoiding wheat), I just eat rice twice a week and a bit of bread during the weekend because it's part of my culture (Jewish people love their Challah bread for Shabbat). Funny that! 🤩

Personally keto freed up my orthorexia. I was vegan before and found out I cannot process plant proteins as well, however I was literally obsessed with the diet. That's all I researched and that's all I talked about. With keto, all I need to worry about is carbs. Not my ideal diet by far, but I have lost 100 pounds with it. Also it lowered my LDL and for the first time in my life my HDL was at a healthy level

I think Vegan YT is keeping the Butler Foods company afloat through the pandemic era, LOL! I briefly cooked a vegan keto diet for personal chefing clients of mine, and became fascinated by the fact that it's more feasible than the gross non-vegan version and seems to require less stringency to achieve ketosis (a thing the gross version adherents HATE to hear). I wish you good luck with quelling the inflammation for longer periods, Mary, as I know how badly losing the ability to do manipulative activities can suck. Thanks for posting!

I’m gonna eat more soy curls! Question, if I make my own cauliflower rice, can I make more than one serving at a time? And if yes, best way to store them? Don’t worry about those negative comments, people need to take your wonderful ideas and convert them to their needs. Also, I get crazy bitter tongue from pine nuts, which is sad because they are delicious. What would you substitute for pine nuts? I try to keep low fat because I have crazy high blood lipids. Right now my triglycerides are 500, so I should try to lower my carbs. I’m only 125lbs and not diabetic and don’t drink alcohol, but my doctor put me on fish oil to try to lower my triglycerides, but I hate to have an animal product back in my diet. I’m thinking of trying to be a bit more vegan keto and see if that helps. Your videos will be a big help for me

Yes, you can make cauliflower rice in advance. I usually make a whole head and then store it in tupperware in the fridge. Put a paper towel in the box to absorb condensation. I try to use up in 3 or 4 days though. I haven't tried freezing but I think that could work too.
Instead of pine nuts, try pecans or macadamia. They are so over the top delicious especially when you pan toast them yourself.

I'm watching your video to get an idea what to eat. Last month, I was diagnosed with T2 diabetes. I stopped eating rice, bread, pasta, sugary drinks, processed food and fast food. I recently got a blood test and uric acid is high, need to avoid eating red meat and seafood. I don't know what to eat anymore, I don't want to eat rice or bread cause I'm avoiding blood sugar spike.

You were absolutely right about me to being great for short term health for certain conditions. It isn’t supposed to be used for long term diet. But plant based should be 100% better in general. And I could ramble on. It doesn’t help that holistic health is my life lol

@@marystestkitchen Zero is totally possible, I believe but for sure I can only advise anti inflammatory herbs be added in very small amounts daily to your meals. Like turmeric and organic if possible is always best.
